Kid food makeovers

 Cheesy Fish Sticks:

makes 4 servings

Ingredients

  • 1/2 cup cornmeal
  • 1/2 cup grated Parmesan cheese
  • 3/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 3 tablespoons canola oil
  • 1 pound catfish fillets, cut into 1-inch strips (or any other mild white fish)

Directions

  1. Preheat the oven to 475Β°F. Lightly oil or coat a large baking sheet with nonstick cooking spray and set aside.
  2. Combine the cornmeal, Parmesan cheese, garlic powder, and salt in a medium bowl and mix well. Place the oil in a small bowl. Lightly coat each piece of fish in the oil and then roll in the breading mixture until well coated.
  3. Arrange the fish on the prepared baking sheet and bake until golden brown, 10 to 12 minutes.

 

No-Nonsense Chicken Nuggets:

Makes 4 Servings

Ingredients

  • 3 cups corn flakes
  • 1/3 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • Pinch of black pepper
  • 1 pound skinless, boneless chicken breast halves, cut into nugget-size pieces
  • 1/4 cup all-purpose flour
  • 2 large eggs, beaten

Directions

  1. Preheat the oven to 425Β°F. Lightly oil or coat a large baking sheet with nonstick cooking spray and set aside.
  2. Place the corn flakes in a resealable plastic bag and crush to a fine texture using a rolling pin or the bottom of a small saucepan, or place in a food processor and pulse several turns until finely crushed. Combine with the Parmesan cheese, salt, onion powder, garlic powder, and pepper in a medium bowl.
  3. To bread the chicken, coat in flour, shaking off excess. Dip in the egg, then coat well in the corn flake mixture.
  4. Arrange the chicken on the prepared baking sheet and cook until golden brown, about 12 minutes.

 

Super Sloppy Joes:

Makes 6 Servings

Ingredients

  • 1 tablespoon canola or olive oil
  • 1 large red or yellow bell pepper, finely diced (about 1 1/2 cups)
  • 1 small onion, finely chopped (about 1/2 cup)
  • 1 1/4 pounds lean ground beef or turkey (90% lean or higher)
  • 1/2 teaspoon garlic powder
  • One 26-ounce jar pasta sauce
  • 6 whole wheat hamburger buns, halved and toasted
  • 6 tablespoons grated Parmesan cheese

Directions

  1. Heat the oil in a large nonstick skillet over medium-high heat. Add the bell pepper and onion and cook until tender, 5 to 7 minutes.
  2. Add the beef and garlic powder and cook, breaking up the large pieces, until the meat is no longer pink, about 5 minutes. Drain excess fat. Add the pasta sauce, reduce the heat, and simmer until heated through, 3 to 5 minutes.
  3. Serve open-face style over hamburger buns and top with Parmesan cheese.

 

South-of-the-Border Mac & Cheese:

Makes 4 Servings

Ingredients

  • One 6-ounce box all-natural macaroni & cheese
  • 1/4 cup 1% lowfat milk
  • 2 tablespoons canola oil
  • One half of a 15 1/2-ounce can black beans, drained and rinsed
  • 1 cup frozen corn kernels, thawed
  • 2 to 4 tablespoons salsa

Directions

  1. Prepare the macaroni as directed; use 1% lowfat milk and substitute 2 tablespoons canola oil for the suggested 4 tablespoons of butter or margarine.
  2. Return the macaroni to the pan. Add the beans, corn, and salsa and stir to combine. Heat through and serve.

Thank you for the recipes. :)   I like the idea of baking the chicken nuggets.
