Veggie beef stew
4 potatoes, cubed, skin on
1lb beef stew meat, shredded
2 tbsp canola oil
8 carrots, diced
1 med onion, chopped
Half a bag EACH frozen peas, green beans, and corn
4 cups beef broth/stock
Garlic
sea salt
Pepper
In a large stock pot, heat oil. Add garlic, and brown. Add beef, salt and pepper, and brown on all sides. Add broth, potatoes and carrots, and more salt and pepper. Simmer until carrots are soft. Add frozen veggies, simmer about 40 minutes.
Serve with an italian salad and biscuits.

Potato soup
In a stock pot, melt 1 stick of butter, add 1 sliced onion and cook until golden brown. Add about 8 diced potatoes with skin, 4 cups chicken broth and salt.
Meanwhile, heat 1 lb of bacon until very crispy, but not burnt.
When potatoes are soft and broth is reduced by half, add 1/2 to 1 cup milk or sour cream, stir. Serve with sprinkling cheddar cheese and bacon.

1 lb shrimp
Heavy cream
Chicken stock
Flour
1 tsp red pepper flakes
Paprika, couple dashes
Chives
Salt
Melt butter in a stock pot, sautee corn until slightly golden. Add salt, pepper flakes, paprika, chicken stock and shrimp. Boil until shrimp is pink. In a measuring cup, make a paste with flour and cream, about 1 1/2 cups cream to 1/3 cup flour, give or take. Pour into shrimp and corn mix, stir and heat through.
In each bowl, dash with paprika. Serve with a salad and cheesy garlic biscuits.
