Hmmmm.....if I know I'm going to be pressed for time, ill prep earlier in the morning.

I also try to keep things on hand for very simple meals. Well, most of mine are, lol, but for those times when I just don't have time.....

 I'm not embarrassed to admit that some of my meals are semi-homemade... this often saves me a lot of time in the kitchen, too.

I make a lot of things on the weekend, like broth and sauces. While I am cooking one meal for that night,  I will go ahead and chop up the veggies(bell pepper, onion, garlic etc) that I am going to use for the next night.

 One night a week we also have "left-over night."  It's quick in the kitchen and helps with your budget :)
