         Lemony Iced Tea

Lemony Iced Tea Recipe


  • 8 Servings
  • Prep/Total Time: 10 min.

Ingredients

  • 8 cups water
  • 3/4 cup sugar
  • 1/2 cup lemon juice
  • 1/2 cup white grape juice
  • 1/4 cup unsweetened lemon-flavored instant tea mix
  • ice cubes
  • Lemon slices

Directions

  • In a large pitcher, combine the water, sugar, lemon juice, grape juice and tea mix. Stir well to dissolve the sugar. Serve in chilled glasses over ice with lemon slices. Yield: 8 servings.


Nutrition Facts: 1 serving (1 cup) equals 88 calories, trace fat (trace saturated fat), 0 cholesterol, 3 mg sodium, 23 g carbohydrate, trace fiber, trace protein.

    Decadent Pumpkin Spice Latte


1 level tablespoon pumpkin puree
1 cup milk (whole if you dare!)
1/2 tablespoon light brown sugar (packed and leveled)
1/4 tsp cinnamon
1/8 tsp nutmeg (+ a pinch for dusting later)
1/8 tsp ground cloves
1/2 tsp pure vanilla extract
2 cups strong coffee (brewed using 2 tbs per 1 cup of water)
You can also use a shot or two of espresso instead of coffee.
4 tablespoons Coffee mate creamer
4 to 8 teaspoons of granulated sugar
Whipped cream

Begin brewing coffee. In a blender puree the milk, pumpkin, cinnamon, nutmeg, cloves, brown sugar and vanilla. Pour into a small saucepan and cook over low heat until the milk is warm and begins to froth slightly. (About 4-5 minutes.) Remove from heat. For each serving: Pour 1/2 cup of the pumpkin mixture into your coffee mug. Add 2 generous tablespoons of Coffee mate creamer. Heat in the microwave for 30 seconds, then add 1 cup of brewed coffee. Add 2 to 4 teaspoons of sugar (depending on how sweet you like your drink, I added 3 tsps.) Top off with a touch more ‘pumpkin milk’ then cover with whipped cream and sprinkle with nutmeg. Serve immediately.

Makes- 2 servings.
I doubled the recipe


*I think after the pumpkin milk is heated on the stove. It could easily be added to a slowcooker to keep warm. Then everyone can add the pumpkin milk to their mugs and then the rest of the ingredients.

 NUTELLA HOT CHOCOLATE

1 cup milk (I use skim)
2 1/2 Tbsp Nutella
1 Tbsp Cocoa
Tiny pinch of salt

In a small sauce pan over medium heat, whisk all ingredients together until well blended and hot.
Pour in a cup and top with homemade whipped cream and shaved chocolate.

Eggnog:
Ingredients
4 egg yolks
1/3 cup sugar, plus 1 tablespoon
1 pint whole milk
1 cup heavy cream
3 ounces bourbon
1 teaspoon freshly grated nutmeg
4 egg whites*
Directions
In the bowl of a stand mixer, beat the egg yolks until they lighten in color. Gradually add
 the 1/3 cup sugar and continue to beat until it is completely dissolved. Add the milk,
cream, bourbon and nutmeg and stir to combine.

Place the egg whites in the bowl of a stand mixer and beat to soft peaks. With the mixer
still running gradually add the 1 tablespoon of sugar and beat until stiff peaks form.

Whisk the egg whites into the mixture. Chill and serve.


Cook's Note: For cooked eggnog, follow procedure below.

In a medium saucepan, over high heat, combine the milk, heavy cream and nutmeg and bring
just to a boil, stirring occasionally. Remove from the heat and gradually temper the hot
mixture into the egg and sugar mixture. Then return everything to the pot and cook until
the mixture reaches 160 degrees F. Remove from the heat, stir in the bourbon, pour into a
medium mixing bowl, and set in the refrigerator to chill.

In a medium mixing bowl, beat the egg whites to soft peaks. With the mixer running gradually
 add the 1 tablespoon of sugar and beat until stiff peaks form. Whisk the egg whites into
the chilled mixture

Mulled Raspberry Mosas

16 fresh or thawed frozen raspberries

1 1/3 cups V8 Splash® Tropical Blend Juice Drink, chilled

1 cup champagne or seltzer water, chilled

  • Place 4 raspberries in each of 4 fluted champagne glasses. Mash them lightly with a fork.
  • Pour 1/3 cup juice drink and 1/4 cup champagne into each glass. Stir and serve immediately.

Mulled Pomegranate Wine

1 bottle (750 milliliters) white Cabernet or white Zinfandel wine

4 cups V8 V-Fusion® Pomegranate Blueberry Juice

3/4 cup sugar

2 cinnamon sticks

1/2 cup pomegranate seeds (optional)

  • Stir the wine, juice, sugar, cinnamon sticks and pomegranate seeds, if desired, in a 4-quart slow cooker.
  • Cover and cook on HIGH for 2 to 3 hours or until the mixture is hot. Serve warm.

 You can change the color to pink by using a red Hawaiian Punch.

Baby Blue Punch

1 (64 fluid ounce) bottle Blue Hawaiian Punch
1 (64 fluid ounce) bottle white cranberry juice
l (2 liter) bottle lemon-lime flavored carbonated beverage (sprite or 7-up)
8 scoops vanilla ice cream

In a large punch bowl, stir together the punch, white cranberry juice and
soda. Float scoops of ice cream on top.

INGREDIENTS

1 1/2cups calcium-fortified orange juice
1/2cup fresh or canned pineapple chunks
1ripe banana, frozen and cut into chunks
2tablespoons vanilla-protein powder or 1/4 cup orange yogurt
3ice cubes

  1. Place all ingredients in blender. Cover and blend on high speed about 30 seconds or until smooth.
  2. Pour mixture into glasses.

INGREDIENTS

1/2cup whipping (heavy) cream
2teaspoons powdered sugar
1/8teaspoon almond extract
4scoops (about 1/4 cup each) chocolate ice cream
4cups strong hot coffee
Chocolate shavings or toasted sliced almonds, if desired

  1. In chilled small bowl, beat whipping cream, powdered sugar and almond extract with electric mixer on high speed until stiff peaks form.
  2. Place 1 scoop ice cream in each of 4 cups or mugs. Pour coffee over ice cream. Top with whipped cream. Garnish with chocolate shavings or almonds. Serve immediately.

Expert Tips

Serve this indulgent coffee with chocolate-covered spoons. Look for them at gourmet stores. Or make your own by dipping silver or plastic spoons into melted candy coating; refrigerate until firm.
