    Sunday Meat Loaf

Sunday Meat Loaf Recipe


  • 10 Servings
  • Prep: 15 min. Bake: 1-1/2 hours

Ingredients

  • 1 cup stewed tomatoes, chopped
  • 1 egg, beaten
  • 3/4 cup quick-cooking oats
  • 1 medium carrot, grated
  • 1 celery rib, diced
  • 2 bacon strips, cooked and crumbled
  • 1 envelope onion soup mix
  • 2-1/2 pounds lean ground beef
  • Ketchup

Directions

  • In a large bowl, combine the first seven ingredients. Crumble beef over mixture and mix well. Shape into a loaf in a greased 13-in. x 9-in. baking dish. Drizzle with ketchup. Bake, uncovered, at 350° for 1-1/2 hours or until meat is no longer pink and a meat thermometer reads 160°. Using two large spatulas, carefully transfer meat loaf to a serving platter. Yield: 10 servings. 

    If you open up a whole package of bacon but don't use it all at once, freeze strips in a single layer on a baking sheet. When frozen, transfer to a large resealable plastic bag. Remove and thaw strips as needed.

Burger 'n Fries Pot Pie
Enjoy this great casserole made using ground beef, vegetables, cheese and French-fried potatoes that’s ready in 45 minutes.
Prep Time: 20 Min
Total Time: 45 Min
Makes: 6

INGREDIENTS:
1 1/2
lb lean (at least 80%) ground beef
1
large onion, chopped (about 1 cup)
2
tablespoons all-purpose flour
1
can (14.5 oz) diced tomatoes, undrained
1
cup shredded Cheddar cheese (4 oz)
2
cups frozen crispy French-fried potatoes (from 20-oz bag)

DIRECTIONS:
  • Heat oven to 450°F. In 12-inch nonstick skillet, cook beef and onion over medium-high heat about 8 minutes, stirring occasionally, until beef is thoroughly cooked; drain well. Sprinkle flour over beef mixture. Cook 1 minute, stirring constantly. Stir in tomatoes; heat to boiling. Remove from heat.
  • In ungreased 1 1/2-quart casserole, spread beef mixture. Sprinkle with cheese. Arrange frozen potatoes evenly in single layer on top.
  • Bake uncovered about 20 minutes or until potatoes are golden brown. Let stand 5 minutes before serving.

My 12 year old DD brought this recipe home from school. It is real easy and very tasty.  Brown 1/2 pound of hamburger. Add 1 can of diced tomatoes and a can of corn. Add one package of taco seasoning. Simmer for about 10 minutes than serve and top with cheese.

  • My favorite crock pot recipe is:

    CrockPot Pizza

    1 lb ground beef

    1 lb sausage

    2 jars ragu pasta sauce

    1 jar ragu pizza sauce

    mushrooms (optional)

    onions (optional)

    green peppers (optional)

    1 pkg. pepperoni

    noodles (your choice any will work, cook them just under al dente)

    mozzarella cheese

    brown your beef sausage, and drain, add to crock pot, add sauces, pepperoni, vegetables, and meat. Cook on high for 4 hrs or low all day. 30 mins before serving add cooked noodles, and cover with a layer of mozzarella cheese.

    • Not my favorite but my 2 year old loves them so we make them a lot...  

       

      Meatballs:

       

      1/2 bag (about 40) store bought meatballs (we use Walmart brand)

      1 jar Heinz Chili Sauce (found by the ketchup)

      1/2 jar of Grape JELLY (not jam)

       

      Put in crock pot for 4-6 hours on low mix all together and serve when ready.  They are really good with tater-tots.  hahaha

If only my mother would have known when I was younger how great Ragu was for me :O).  I was a difficult child who didn't eat to many veggies.  But I LOVED Ragu and still do.  I have found ways over the years to include the wonderful taste of Ragu into my dishes. This is my fast easy meatloaf made with Ragu you will never make it another way again I promise :O)

 

Ingredients:

 

1 pound ground meat(you can use whatever meat you like)

1 cup breadcrumbs(may need more or less it varies :O))

3/4 cup Ragu pasta sauce(not just for pasta anymore)

1 egg

1 teaspoon pepper

1 teaspoon garlic powder or salt

1 teaspoon Italian seasoning

 

Directions:

Mix all ingredients together and form into loaf. Place in pan uncovered. Place in over on 300 for about an hour. Different meats take more or less time.  You will get a great crust on the outside when it is done :O)

 

****Also make GREAT meatballs for spaghetti****

2LB HAMBURGER MEAT

2PK OF SOUR DOUGH FRENCH BREAD

2 BAGS OF MOTZERELLA CHEESE

  

Cook hamburger in skillet season with garlic salt or what ever you like,hollow out the 2 loafs of french bread. Mix meat and cheese in bowl then stuff the bread with the meat/cheese mixture.  brush top of bread with butter and garlic and wrap in foil then place in oven @350 for about 10 min.

Serves 6

You can have a salad and veg of your choice with this.  Its cheap and quick

  • My mom's recipe for meatloaf, we do it up in patties instead of a loaf, cooks faster, doesn't heat the entire house up AND everyone gets the yummy crunchy end parts!

    1 lb hamburger

    1 egg

    1 pkg saltine crackers, smooshed up

    splash of milk about 1/8 to 1/4 cup, just to have the meat moist

    If baking, but it in dish 350 degrees for about half hour -45 min ; If you wanna try the patties, do it up just like you would hamburger patties!! YUMO!

    •  taco bake. It is easy and less messy then traditional tocos. I bought the kit at a store to make them the first time but now I make them myselves just as easily.

      Ingredients

      • soft toco shells
      • 1 pound hmburger
      • toco seasoning
      • shredded toco cheese
      • lettuce, chopped
      • tomatoes cut into cubes
      • sour cream
      • toco sauce

       Directions

      • brown hamburger in a frying pan
      • drain off grease and add water and seasoning mix as per package directions
      • in an ungresed pie pan alternate soft shell toco shells with meat and cheese
      • finish off with meat and cheese on top
      • bake at 350F for about 15 mins or until heated throughally
      • top with lettuce, tomatoes, toco sauce and sour cream
      • Cut like you would a pie
      • Serve and enjoy

    PORCUPPINE MEATBALLS

    • 1 1/2 pounds hamburger
    • 2/3 cup Instant Minute Rice
    • 1/2 diced onion (you could use dried minced onions instead)
    • 1/2 tsp salt
    • 1/4 tsp pepper
    • 2 Tbsp. oil
    • 2 cans cream of mushroom soup
    • milk (1 to 1 1/2 cans from the soup depending on how thick or thin you want the sauce)
    • 2 cups water
    • 2 cups Instant Minute Rice

    Preparation

    Put the first 5 items into a bowl and mix together with your hands. Make 1" round meatballs and put them into a skillet with oil. Brown on all sides (approx. 10 to 15 minutes).

    Mix the 2 cans of soup and milk in a bowl. Drain the excess oil in the skillet. Add the soup mixture and bring to a boil. Cook for 20 to 25 minutes on simmer.

    Boil the 2 cups of water for the rice in a sauce pan. Cook as instructed on the box.

    Pour the meatballs over a plate of rice.

Pizza Burgers

PIZZA BURGERS  

 

1 lb. hamburger or ground chuck
1 small jar ragu 
1 can cream of mushroom soup
1 8 oz. package shredded mozzarella cheese
1 package hamburger buns

 

Preheat oven to 375°F.

Spray a 13x9 pan with Pam or lightly grease with oil. Split hamburger buns and place eight halves in pan. Sauté hamburger in saucepan or skillet until crumbly, then drain. Add the pizza sauce and cream of mushroom soup. Cook until heated through.

Spoon meat mixture onto hamburger buns, top with cheese.

Bake until cheese melts and edges are browned and bubbly.

You can add other ingredients such as sliced black olives or sautéed onions, green peppers and mushrooms to the meat mixture if you want "loaded" pizza burgers.
