   Southern Fried Chicken


  Southern Fried Chicken Recipe

  

  • 4-6 Servings
  • Prep: 10 min. Cook: 35 min.

Ingredients

  • 1 cup pancake mix
  • 2 to 3 teaspoons salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika
  • 1 broiler/fryer chicken (3 to 4 pounds), cut up
  • Oil for deep-fat frying

Directions

  • In a large resealable plastic bag, combine the pancake mix, salt, pepper and paprika. Add chicken, a few pieces at a time; shake to coat.
  • Heat 2 in. of oil in an electric skillet or deep-fat fryer to 375°. Fry chicken, a few pieces at a time for 6 minutes on each side or until golden brown and juices run clear. Yield: 4-6 servings.

Chicken Spaghetti Casserole Recipe


  

  • 6 Servings
  • Prep: 25 min. Bake: 25 min.

Ingredients

  • 8 ounces uncooked spaghetti, broken into 3-inch pieces
  • 3 cups cubed cooked chicken
  • 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
  • 1 medium onion, chopped
  • 1 cup 2% milk
  • 1 cup (4 ounces) shredded sharp cheddar cheese, divided
  • 1 cup (4 ounces) shredded Swiss cheese, divided
  • 1 can (4 ounces) mushroom stems and pieces, drained
  • 1/2 cup chopped roasted sweet red peppers
  • 3 tablespoons mayonnaise
  • 1-1/2 teaspoons steak seasoning
  • 1/2 teaspoon dried basil

Directions

  • Cook spaghetti according to package directions. Meanwhile, in a large bowl, combine the chicken, soup, onion, milk, 1/2 cup cheddar cheese, 1/2 cup Swiss cheese, mushrooms, peppers, mayonnaise, steak seasoning and basil.
  • Drain spaghetti. Add to chicken mixture; toss to coat. Transfer to a greased 13-in. x 9-in. baking dish. Cover and bake at 350° for 20 minutes. Uncover; sprinkle with remaining cheese. Bake 5-10 minutes longer or until heated through and cheese is melted. Yield: 6 servings.

Editor's Note: This recipe was tested with McCormick’s Montreal Steak Seasoning. Look for it in the spice aisle.

Ingredients

  • 8 ounces uncooked spaghetti
  • 1 cup ricotta cheese
  • 1 cup (4 ounces) shredded part-skim mozzarella cheese, divided
  • 2 tablespoons grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1 jar (26 ounces) meatless spaghetti sauce
  • 1 can (14-1/2 ounces) Italian diced tomatoes, undrained
  • 1 jar (4-1/2 ounces) sliced mushrooms, drained
  • 4 breaded fully cooked chicken patties (10 to 14 ounces)

Directions

  • Cook spaghetti according to package directions. Meanwhile, in a large bowl, combine the ricotta, 1/2 cup of mozzarella, Parmesan, Italian seasoning and garlic powder; set aside. In another bowl, combine the spaghetti sauce, tomatoes and mushrooms.
  • Drain spaghetti; add 2 cups spaghetti sauce mixture and toss to coat. Transfer to a greased 13-in. x 9-in. baking dish; top with cheese mixture.
  • Arrange chicken patties over the top; drizzle with the remaining spaghetti sauce mixture. Sprinkle with the remaining mozzarella. Bake, uncovered, at 350° for 40-45 minutes or until bubbly. Yield: 4 servings.


Nutrition Facts: 1 serving (1 cup) equals 719 calories, 25 g fat (12 g saturated fat), 88 mg cholesterol, 1,998 mg sodium, 84 g carbohydrate, 6 g fiber, 39 g protein.

Ingredients

  • 1 package (13-1/2 ounces) frozen chicken nuggets
  • 1/3 cup grated Parmesan cheese
  • 1 can (26-1/2 ounces) spaghetti sauce
  • 1 cup (4 ounces) shredded part-skim mozzarella cheese
  • 1 teaspoon Italian seasoning

Directions

  • Place chicken nuggets in a greased 11-in. x 7-in. baking dish. Sprinkle with Parmesan cheese. Top with spaghetti sauce, mozzarella cheese and Italian seasoning.
  • Cover and bake at 350° for 30-35 minutes or until chicken is heated through and cheese is melted. Yield: 4-6 servings.

Easy Chicken Tacos

  

     

Ingredients

  • 2 13-oz. cans chunk chicken, drained
  • 1 14.5-oz. can diced  tomatoes with chilies (use regular diced tomatoes if you don't like it too spicy)
  • 1 pkg. taco seasoning
  • 1/2 C. frozen corn
  • 1 Tbs. minced  onion, or 1/3 C. fresh chopped onion
  • 1/2 tsp. chili powder
  • 1/2 tsp. sugar
  • 1/2 tsp. crushed red peppers (optional)
  • salt and pepper to taste
  • Toppings:
  • salsa
  • diced fresh tomatoes
  • shredded cheese
  • sour cream
  • shredded lettuce

Directions

Break chicken up in a fry pan and add remaining ingredients (besides toppings) and stir until mixed. Cook over medium heat until mixture is still moist, but not soupy. Serve on warmed flour taco shells and top with salsa or diced fresh tomatoes, shredded cheese, sour cream, and shredded  lettuce.

Easy Teriyaki Chicken and Brown Rice Dinner

Ingredients

  • 1 Tbs. oil
  • 1 lb. boneless skinless chicken breast halves, cut into strips
  • 1 1/2 C. water
  • 1/3 C. teriyaki sauce
  • 1/2 tsp. garlic powder
  • 2 C. Minute Brown Rice, uncooked
  • 2 C. frozen broccoli florets
  • 1/2 C. Planters Salted Peanuts (optional)

Directions

 

Heat oil in large nonstick skillet on medium-high heat. Add chicken;  cook and stir 5-7 minutes or until cooked through. Add 1 1/2 C. water, teriyaki sauce and garlic powder to skillet; stir. Bring to boil. Stir in rice,  broccoli and peanuts; cover. Cook on low heat 5 minutes. Remove from heat. Let stand 5 minutes. Fluff with fork.

 

 

Tip: Try adding cut up red peppers and  carrots with the broccoli for added color and texture, and get an extra serving of  vegetables. Increase oil to 2 Tbs. if using regular skillet.

 

 

Yield: 4 servings

    Chicken with garlic cheddar biscuits


     

    This is what we had for supper last night and it is so good, so quick, so easy, you know all the good things.

    Ingredients
    2 cans Cream of Potato soup
    1 can milk
    2 cans Veg All
    2 large cans tyson chicken chunk white breast

    1½ c bisquick
    ½ c milk
    ½ c shredded sharp cheddar
    garlic powder (to taste)

    Preheat oven to 450º degrees. Mix first four ingredients and spread in an ungreased glass baking dish. Mix bisquick, milk, cheese, and garlic powder together. Drop large balls of biscuit mix on top of the chicken vegetable mixture. Cook 15-20 minutes or until chicken veg mixture is bubbling and biscuits are browned. DELICIOUS!

    Easy Chicken

    Get chicken breast strips, spaghetti, and rice (I like boil in a bag).

    Grill the strips, boil the rice, heat the sauce. Put the chicken on the rice, pour the sauce over the rice and chicken. Cooks in about 10 minutes.

Chicken Enchilada Skillet Casserole

You'll Need:

  • 1 bag frozen vegetable medley such as Broccoli, Corn and Peppers (a 1lb. bag works well)
  • 1 package taco seasoning mix (2.25oz)
  • 1 can Ragu pasta sauce or diced tomatoes, not drained (14.5oz)
  • 3 cups shredded cooked chicken (hint**left over chicken works perfectly**)
  • 1 cup shredded Monterey Jack cheese
  • 8 oz tortilla chips (optional) or tortillas (optional)
To Make:

In large skillet, combine vegetables, seasoning mix, Ragu sauce (or tomatoes) and chicken; bring to boil over MEDIUM-HIGH heat. Cover; cook 4 minutes or until vegetables are cooked and mixture is heated through. Sprinkle with cheese; cover and cook 2 minutes more or until cheese is melted.
