This is served at Bonefish Grill. It's not a copy-cat recipe. It's the real thing.

Bang Bang Shrimp

Spicy Sauce

½ cup mayonnaise

4 tsp chili garlic sauce

1 tsp sugar

½ tsp rice vinegar

Shrimp

8 to 12 cups vegetable shortening or oil

16 to 18 medium shrimp, peeled and deveined

1. Combine all ingredients for chili sauce in a small bowl and set aside.

2. dip shrimp in cornstarch

3. Heat oil to 350 degrees. Use the amount of oil required by your fryer.

4. Bread shrimp by first coating each with breading, then dip into egg mixture, and then back into breading. Arrange the coated shrimp on a plate and pop them into the fridge for at least 20 minutes. This step will help the breading to stick on the shrimp when they are frying.

5. When your oil is hot, fry the shrimp for 3 to 4 minutes or until golden brown. Drain on a rack or paper towels. When all of the shrimp have been fried, drop the shrimp into a large bowl. Spoon about ¼ cup of the sauce over the shrimp and stir gently to coat. Stack the shrimp on a bed of mixed greens, then sprinkle chopped green onion over the top.

•1/2 cup mayonnaise

•1/4 cup Thai Sweet Chili Sauce

•a few drops of Sriracha Hot Chili Sauce

•DRY CORN STARCH FOR BATTER

1.1/2 cup mayonnaise

2.1/4 cup Thai Sweet Chili Sauce

3.a few drops of Sriracha Hot Chili Sauce

4.Mix the above to make the sauce.

5.1 pound of shelled and deveined shrimp

6.Dry cornstarch to coat the shrimp in

7.Deep fat fry the shrimp until lighty brown.

8.Drain on paper towel, put in a bowl and coat with

9.the sauce.

Caesar's Fish

1 lb flounder filets (or other mild fish)
1/2 cup Caesar Salad Dressing
1 cup cracker crumbs (Ritz or Cheetos)
1/2 cup (2 oz.) shredded cheddar cheese
Preheat oven to 400. Arrange filets in a single layer in lightly greased 13x9" baking dish. Drizzle Caesar salad dressing over the filets. Sprinkle cracker crumbs over top. Bake about 5-8 minutes. Top with cheese. Bake just till cheese is melted. Test fish doneness with a fork. It should be flaky easily and be opaque.

Notes: I use whatever crackers I have on hand. Place in a zip-lock bag and crush with a rolling pin, side of a meat mallet or a can.
