Love chicken fingers? Who doesn't? ... my butt!

Lighter chicken fingers.. mmmmmm

Healthier Crispy Chicken Fingers
Adapted from Ellie Krieger

1-1/4 pound boneless, skinless chicken tenderloins
1/2 cup lowfat buttermilk
Cooking spray
4 cups whole-grain cereal (I used 1/2 Corn Chex & 1/2 Cornflakes)
Salt & pepper

Honey-Mustard Sauce

1/2 cup Dijon mustard
1 Tablespoon mayonnaise
3 Tablespoons honey

Preheat oven to 400o F.  Combine the chicken and the buttermilk in a shallow dish.  Cover and chill for 15 minutes.

Pulverize cereal in a food processor.  You could put the cereal in a plastic bag and crush with a rolling pin, it just won't be as fine or evenly crushed.

Spray a baking tray with cooking spray.  Season the chicken well with salt and pepper.  Dip each piece of chicken in the cereal to fully coat and arrange on the baking tray.  Bake until cooked through, about 10 minutes.  Leave the chicken on the baking tray to cool slightly, it will get crispier.

While chicken is baking make the honey-mustard sauce by combining mustard and mayonnaise until smooth.  Stir in honey.

 hmmm those look soo good!  Much better than the ones we just ate from whataburger!  :-)

A full stomach off that picture....lol.......just looking at the picture makes me want to make some now!  Saving this recipe....I LOVE chicken nuggets too....I LOVE chicken:)

Here is the recipe I normally use for chicken nuggets.  I got it from allrecipes.com.  They are super yummy....but probably not so healthy since they are dipped in butter, bread crumbs and cheese!

Ingredients

  • 1 cup dry bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons dried basil
  • 2 teaspoons dried thyme
  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3/4 cup butter, melted
  • 2 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes

Directions

  1. In a shallow bowl, combine the bread crumbs, Parmesan cheese and seasonings. Place butter in another shallow bowl. Dip chicken in butter, then roll in bread crumb mixture.
  2. Place in a greased 15-in. x 10-in. x 1-in. baking pan. Bake, uncovered, at 400 degrees F for 15-20 minutes or until juices run clear.

 This is similar to a recipe I've use, but it doesn't have dried basil-don't care for the flavor of the dried- but very yummy.

Here's mine.....I just coat them in flour and fry them up.

Chicken Tenders
1 to 2 trays boneless chicken breasts
Flour
Seasonings your choice
Oil

Wash and cut chicken breasts in strips, season meat
Put flour and seasonings in bag
Place chicken strips in bag and coat
Heat oil in medium to large deep boiler
Place batches of strips in oil and fry until lightly browned

**I like dipping mine in Ranch Dressing and lately mixing the Ranch with hot sauce for dipping.

Oh those look good. I tried making them with some kind of healthy cereal once and they were not edible. Let me know how these are.
