Caribbean Chicken Caesar Salad

Ingredients
- 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
- 1/2 cup thawed non-alcoholic pina colada mix, divided
- 1 cup tangerine or mandarin orange segments
- 1 celery rib, chopped
- 2 tablespoons crushed pineapple
- 1 green onion, chopped
- 4 pitted ripe olives, sliced
- 2 tablespoons plus 2 teaspoons lemon juice
- 4 teaspoons mayonnaise
- 2 teaspoons grated Parmesan cheese
- 1 to 2 garlic cloves, minced
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 4 cups torn romaine or iceberg lettuce
Directions
- Combine chicken and 1/4 cup pina colada mix. In a large skillet
- coated with cooking spray, cook and stir chicken mixture over medium
- heat until chicken is no longer pink. Remove from the heat; set
- aside.
- Combine the tangerines, celery, pineapple, onion and olives in a
- large bowl. In a small bowl, combine the lemon juice, mayonnaise,
- cheese, garlic, salt, pepper and the remaining pina colada mix.
- Add chicken and romaine to the tangerine mixture; drizzle with
- dressing and toss to coat. Serve immediately. Yield: 4 servings.

Half Cup Pasta Salad
1 lb tri-color rotini pasta, cooked and drained1/2 cup red onion, chopped1/2 cup red bell pepper, chopped1/2 cup yellow bell pepper, chopped1/2 cup celery, chopped1/2 cup cubed cheddar cheese1/2 cup cubed salami1/2 cup sliced black olives1/2 cup cherry tomatoes, halved1/2 cup artichoke hearts, drained and chopped24oz Wishbone Italian Dressing1/4 cup soy sauce1/4 cup sugarWhisk together the dressing, soy sauce, and sugar and adjust as needed. Toss with the other ingredients and let sit in fridge at least 2 hours before serving. Toss well again before serving.

Spaghetti Salad
1 lb. spaghetti
1 med. red onion,finely diced
2 cucumbers,finely diced
2 green pepper,finely diced
2 tomatoes,finely diced
16 oz. bottle Wishbone Italian dressing
1/2 or 2/3 bottle McCormicks Salad SupremeBoil spaghetti, rinse in cold water. Add dressing and Salad Supreme, mix well. Then add all chopped vegetables. Refrigerate.

my favorite pasta salad
summer pasta salad:
rainbow pasta, prepared according to pkg direction, & cooled
sliced, zuccini, yellow squash, orange bell pepper, & cucumber
crumbled feta cheese
zezty italian dressing to tast.
sometimes i marinate chicken in zezty italian dressing, and grill. i add that to the pasta salad to make a good summertime meal.
serve with fresh lemonade & french bread...yummm

- Macaroni Salad:
- 1 C. Elbow Macaroni, cooked and cooled.
- 1/2 red onion, minced
- 1 can tuna, drained
- 1 can peas(or about 1 c, frozen, thawed.)
- 2 ribs celery, chopped fine
- 1 tbsp parsley, minced
- 1 tsp fresh lemon juice
- 3 hard boiled eggs, chopped
- 1/8 tsp dried thyme
- S/P
- Miracle WHip
- In a large bowl flake the tuna with a fork. Add the lemon juice, thyme, and salt and pepper to taste. Add the onion, celery, parsley, and macaroni . Combine. Add the egg. Stir. Add enough Miracle whip for the salad to be wet. No one likes this salad dry, so do not be stingy. Lastly add the peas, and gently fold in so you don't mush them. This recipe can be doubled, tripled, and so on very easily. In fact I never make less than a double batch. One varition of this, if you hate miracle whip is too use Hellmans Mayo. It is still good, but the Miracle Whip makes it fantastic. If I make the mayo based one, I add a little chopped green olives for a little salty punch.

you can put anything in pasta salad.
Pretty much just decide if you want it cream dressing or a more italian style dressing. Add in cheese (feta, cheddar, motza, etc) , chopped veggies (peppers, brocoli, cauliflower, shreadded carrot, onions, chives, tomotoes, corn), olives are good in it with italian dressing and feta, you can also add pickles diced up. In creamy I like diced eggs, mayo, mustard, ranch, chopped dry sausage is good in it too.. there are so many variations you can do.
Ham i usually make a glaze with soya, apple cider vinager, pineapple juice, ginger, garlic, salt, pepper, brown sugar .. then just cook it.
Chicken Salad with Rice, Pecans, Grapes, and Orange Dressing
Crisco® no-stick vegetable cooking spray
4 skinless, boneless chicken breast halves (about 1 pound)
1 tablespoon grated orange zest
1 cup Smucker's® sugar-free orange marmalade
1/3 cup raspberry vinegar
1/8 teaspoon ground black pepper
3 1/2 cups cooked wild rice
8 green onions, sliced (about 1 cup)
1 cup seedless green grapes cut in half
1/4 cup chopped pecans, toasted
- Spray a 12-inch skillet with the cooking spray and heat over medium-high heat for 1 minute. Add the chicken and cook for 15 minutes or until it's well browned on both sides and cooked through. Remove the chicken to a cutting board. Cut the chicken into strips.
- Beat the orange zest, marmalade, vinegar and black pepper in a small bowl with a fork or whisk.
- Place the chicken, rice, green onion, grapes and pecans, if desired, into a large bowl. Add the marmalade mixture and toss to coat.
Classic Carrot Salad
Ingredients:
1 pound carrots
½ cup raisins
1 small can of diced or crushed pineapple
½ cup mayonnaise
1 tbsp. granulated sugar
Directions:
Put raisins in a cup of very warm water (or apple juice or grape juice) so they plump back up.
Turkey Fruit Salad

| 112 cup | seedless grapes (red seedless grapes or green) | |
| 112 cup | cheese (shredded mexican blend) | |
| 2 tbsp | honey | |
| 1 tbsp | lime juice | |
| leaf | red leaf lettuce (optional) |
| 1 | In a large bowl, combine fruit and cheese. |
| 2 | Combine honey and lime juice. |
| 3 | Toss gently with fruit mixture. |
| 4 | Serve on lettuce leaves if desired. |
