Low Fat Mexican Macaroni and Cheese

About This Recipe

"Found this in a Weight Watcher's cookbook of recipes from the magazine in 2000. This is fast to make and has a nice flavour. Not a zingy dish, but the kids and I enjoyed it. 2/3 of a cup is 3 WW points."


    • 8 ounces uncooked elbow macaroni
    • 5 ounces light processed cheese ( Light Velveeta)
    • 1 teaspoon taco seasoning
    • 1/2 cup salsa


  1. Boil water for the macaroni. Cook the noodles in the water until done, usually 7-9 minutes.
  2. While the noodles are cooking cube the cheese.
  3. When the noodles are done drain them and then return to the pan.
  4. Add the cubed cheese and taco seasoning. Stir well, until the cheese is melted.
  5. When melted, add the salsa and serve.

Breakfast Potatoes (crockpot) -

4 Med-large potatoes
1 Onion - peeled and chopped
1 tbsp. butter
4 slices of bacon
4 oz. Cheddar Cheese

Fry or cook bacon in Microwave. Slice potatoes, Chop Onions, grate cheese.
Layer Potatoes, Butter, Onion, Bacon, Cheese. Only layer this 2 times.
Cook on High 8-10 hours.

Cola Chicken -

4  (4-ounce) skinned and boned chicken breasts
1/4 cup reduced-sodium ketchup
1/4 cup Diet Coke
1 teaspoon dried onion flakes
1 teaspoon dried parsley flakes

Spray a slow cooker container with butter-flavored cooking spray. Evenly arrange chicken pieces in prepared container. In a medium bowl, combine ketchup, diet Coke, onion flakes and parsley flakes. Mix well. Pour sauce mixture evenly over chicken pieces. Cover and cook on low for 4 to 6 hours. Spoon sauce over chicken to serve.

I'm actually making this now. I'm going to add a can of black beans the last hour and maybe some corn. It is a great meal.

About This Recipe

"Someone gave me this recipe a few years back and it's become a household favorite. You can use mild, medium or hot salsa depending on your taste. I usually serve it with Spanish rice and Mexican-style canned corn. Very easy and quick!"



    • 4 boneless skinless chicken breast halves

    • 4 -5 teaspoons taco seasoning mix

    • 1 cup salsa

    • 1 -1 1/2 cup shredded cheddar cheese

    • 2 tablespoons sour cream (optional)


  1. Preheat oven to 375 degrees F (190 degrees C).

  2. Place chicken breasts in a lightly greased 9x13 inch baking dish.

  3. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.

  4. Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.

  5. Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly.

  6. Top with sour cream if desired, and serve.

Chicken Tacos -

2 pounds boneless skinless chicken breasts
1 (8 ounce) jar taco sauce

Place chicken in crockpot with taco sauce; cook on low for 8 hours. When done, stir with a fork to shred chicken and serve in taco shells or soft tortillas with cheese, lettuce and other taco fixings.

Crockpot Chicken

4 Boneless, Skinless Chicken Breasts
1 lg. can Cream of Chicken Soup
Salt and Pepper to taste

Cut fat off of the chicken breasts and place them in the crock pot. Cover with soup and add salt and pepper to taste. Cook on low for approximately 8 hours. The Cream of Chicken Soup makes great gravy for potatoes too.

 Thiss super easy recipe uses just four ingredients, and are cheeseburgers in the form of sloppy joe sandwiches.

Prep Time: 10 minutes

Cook Time: 4 hours

Chockpot Cheeseburgers

1 lb. lean ground beef

1/4 cup ketchup

1-2 Tbsp. yellow mustard

2 cups cubed pasteurized process American cheese

10 hamburger buns

Cook ground beef in large skillet until thoroughly cooked, about 5 minutes. Stir frequently to break meat up into small pieces. Drain beef thoroughly.

Combine in slow cooker with ketchup, mustard, and basil and mix well. Add chopped onion, if desired. Top with cubed cheese. Cover crockpot and cook on low for 3-4 hours. Stir beef mixture gently. Serve beef mixture in hamburger buns. 10 sandwiches

This is a super easy crockpot three ingredient turkey recipe. Note the different cooking times if you're using a bone-in or boneless breast.
Prep Time: 10 minutes
Cook Time: 7 hours
Turkey Breast

1 frozen turkey breast, NOT thawed bone-in (about 5 pounds) or boneless (about 3 pounds)

1 lb. can cranberry sauce

1 envelope dry onion soup mix

For bone-in turkey, put all ingredients into 5-6 quart crockpot, cover, and cook for 2 hours on high. Then reduce heat to low and continue cooking for 4-5 hours until turkey registers 170 degrees F on instant meat thermometer. (Some sources now say that 165 degrees F is acceptable for a safe temperature).

For boneless turkey breast, follow instructions above. When you reduce the crockpot heat to low, start checking the turkey after 1-2 hours. It may only need that much time to reach 170 degrees F.

Slice turkey breast and serve with sauce. 6 servings

You could also use penne or mostaccioli pasta in this five ingredient casserole recipe.
Prep Time: 15 minutes
Cook Time: 35 minutes
Baked Chicken & Ziti

2 cups ziti pasta

12 oz. can chunk dark and white meat chicken, drained or 1 1/2 cups cooked chicken

2 cups shredded Muenster cheese

10 oz. can condensed cream of chicken soup, mixed with 1 can water

1/4 cup grated Parmesan cheese

Preheat oven to 350 degrees F. In large pot, cook ziti as directed on package and drain well. Combine all ingredients except Parmesan cheese and spoon into a greased 2-quart casserole dish. Top with Parmesan cheese. Bake at 350 degrees for 30-35 minutes or until hot and bubbly. Serves 6
I also like to add 10 oz pkg frozen vegetables, or 1 can vegetables, drained

This delicious Italian meal is made in your crockpot using only five ingredients.
Prep Time: 20 minutes
Cook Time: 8 hours

Sausage & Tortellini

1 lb. bulk Italian sausage

26 oz. jar pasta sauce

14 oz. can diced tomatoes, undrained

1 tsp. dried Italian seasoning

9 oz. pkg. refrigerated cheese tortellini

1 cup shredded pizza cheese OR grated Parmesan cheese

Cook sausage in heavy skillet over medium heat until browned, about 10 minutes. Stir sausage frequently to break up as it cooks. Drain well and place in 4-5 quart slow cooker. Add pasta sauce, tomatoes, and Italian seasoning and stir well.

Cover and cook on low 7-8 hours. Then stir in tortellini, cover again and cook on low for 20-40 minutes or until pasta is tender and heated. Sprinkle with cheese and let stand 5 minutes before serving. 4 servings
