Low Fat Mexican Macaroni and Cheese

About This Recipe

"Found this in a Weight Watcher's cookbook of recipes from the magazine in 2000. This is fast to make and has a nice flavour. Not a zingy dish, but the kids and I enjoyed it. 2/3 of a cup is 3 WW points."

Ingredients

    • 8 ounces uncooked elbow macaroni
    • 5 ounces light processed cheese ( Light Velveeta)
    • 1 teaspoon taco seasoning
    • 1/2 cup salsa

Directions

  1. Boil water for the macaroni. Cook the noodles in the water until done, usually 7-9 minutes.
  2. While the noodles are cooking cube the cheese.
  3. When the noodles are done drain them and then return to the pan.
  4. Add the cubed cheese and taco seasoning. Stir well, until the cheese is melted.
  5. When melted, add the salsa and serve.

Just five ingredients combine to make a delicious one dish meal for a cold fall or winter night.
Prep Time: 15 minutes
Cook Time: 25 minutes
Total Time: 40 minutes
Ham & Broccoli Rice Dinner

1 Tbsp. olive oil

1 onion, chopped

4 oz. pkg. long grain and wild rice mix

1-3/4 cups water or chicken broth

2 cups frozen broccoli florets

1-1/2 cups cubed cooked ham

1/3 cup grated Parmesan cheese

In a large skillet, melt olive oil over medium heat and cook onion until tender, stirring frequently. Add rice from mix and cook for 2 minutes, stirring frequently. Add water and contents of seasoning packet from the rice mix; mix well. Bring to a boil, then reduce heat to low, cover the skillet, and cook for 10 minutes, stirring occasionally.

Stir in broccoli and ham. Return mixture to a boil, then reduce heat again to low, cover, and cook 10-15 minutes until rice is tender, stirring frequently. Stir in Parmesan cheese and serve. Serves 4

Kid Pleasing Pizza Lasagna (piog)

Oven ready lasagna noodles (the kind you don't have to boil ahead)
Pizza sauce
Pizza toppings, your favorites

Layer all  in a 9x13 pan as you would lasagna, cover with foil throw in 350 oven
for about 35-45 min and there you have it.  A sure to please no-sweat dinner.
You could throw it together the night before store in fridge and toss in oven the next day.

Easy Alfredo Chicken - justslowcooking.com

4 Chicken Breasts
1 jar Parmesan Alfredo sauce
1 can sliced mushrooms; drained

Spray slow cooker with non-stick cooking spray. Place frozen chicken in slow cooker. Add mushrooms and Alfredo sauce. Cook 6-8 hours on low. Serve over cooked pasta or rice. Top with grated Parmesan cheese.

Barbecue Chicken - food.com (piog)
4 -6 frozen chicken breasts
18 ounces barbecue sauce

Put chicken in crock pot, then add a bottle of barbecue sauce over the chicken.
Cook on high for 3-4 hours.
