Low Fat Mexican Macaroni and Cheese

About This Recipe

"Found this in a Weight Watcher's cookbook of recipes from the magazine in 2000. This is fast to make and has a nice flavour. Not a zingy dish, but the kids and I enjoyed it. 2/3 of a cup is 3 WW points."

Ingredients

    • 8 ounces uncooked elbow macaroni
    • 5 ounces light processed cheese ( Light Velveeta)
    • 1 teaspoon taco seasoning
    • 1/2 cup salsa

Directions

  1. Boil water for the macaroni. Cook the noodles in the water until done, usually 7-9 minutes.
  2. While the noodles are cooking cube the cheese.
  3. When the noodles are done drain them and then return to the pan.
  4. Add the cubed cheese and taco seasoning. Stir well, until the cheese is melted.
  5. When melted, add the salsa and serve.

Stubb's stovetop BBQ Chicken w/ onion & bell pepper (piog)

1 cup Stubb's Smokey Mesquite BBQ Sauce
3 chicken breasts
1 medium yellow onion, sliced
1 medium red bell pepper, sliced

Place chicken breasts in large, heavy pot or dutch oven. Cover with BBQ sauce. Bring to simmer, reduce heat and continue cooking till breast's are done (will not be "springy" when pressed with fork, but solid). If desired, shred meat with two forks. Add onion and bell pepper and cook till veggies are tender but not mushy. Serve with brown rice or corn & beans and a salad.  Number of Servings: 6

SHEPHERD'S PIE - cooks.com
1 lb. hamburger
1 lg. can cream corn
Mashed potatoes (left over)

Brown the hamburger. Using a two quart casserole dish layer hamburger, creamed corn, and then the mashed potatoes. Make two layers ending with the potatoes. Bake at 350 degrees for twenty minutes.

Told my wife I'd add this one for you all.  Yes, this is coming from the Dad! :)

although,  come to think of it the recipe came from my mom but anyway... 

Italian Chicken

Prep time ~ 15 - 30 min (I never pay attention)

Bake time 30 min

Ingredients

4 Boneless Skinless Chicken Breast

Italian style Bread Crumbs

2 Eggs, scrambled (Not cooked)

Can of mushrooms

Mozzarella cheese

 

Pre-heat oven to 350*. 

Heat some olive oil in a skillet.  Dip chicken breasts in the egg then in the bread crumbs, coating thoroughly.  Brown in skillet and place in glass baking dish.  Pour can of mushrooms, juice and all over the browned chicken and cover with aluminum foil.  Bake at 350 for 30min until cooked through.  Remove and top with cheese, cover, and place back in oven for another 5min until melted. 

I'll post a pic next time we make it unless someone else tries this and beats me to it.   On another note, next time I make this I might mix in a little parmesan cheese with the bread crumbs.

Would I be able to omit the mushrooms?

Probably however, you may want to add a tiny bit of water to it or something... maybe even small can of chicken broth or something just to make up for the lack of liquid from the can of mushrooms... There's not alot in those cans so don't drench it...

About this recipe: Dont remember where I got this recipe, but its a household last minute go-to meals. Hubby luvs it!

Ingredients:

1 pkg. Kielbasa Sausage-sliced bite-size

1 onion sliced

1 red & yellow bell pepper sliced

minced garlic

cooked white rice

 

Directions: Saute sausage with garlic and onions until seared. Add peppers and continue cooking, until tender. Serve over rice. May add other veggies if desired.
