Hungarian Beef and Noodles

Ingredients:

1 pound lean ground beef
1 medium onion, chopped
1 medium green bell pepper, chopped
1 garlic clove, minced
1 Tablespoon paprika
1 teaspoon dried thyme
3½ cups beef broth
4 cups medium egg noodles
1 (10 ounce) package frozen peas and carrots
¼ cup sour cream


Directions:

1. In a large nonstick skillet, brown the beef over medium-high heat, breaking up any large chunks of a spoon.

2. Stir in the onion, bell pepper, and garlic. Cook, stirring often, for 5 minutes.

3. Stir in the paprika and thyme.

4. Add the broth, and noodles, and peas and carrots. Bring to a boil over medium-high heat.

5. Reduce the heat to low, cover, and simmer for 8 to 10 minutes, stirring occasionally, until noodles are tender.

6. Stir the sour cream into the noodle mixture and simmer, uncovered, for 2 minutes. Makes 4 servings.

Grilled Cheese Roast Beef Sandwiches

Ingredients:

10 slices Italian bread
2 Tablespoons butter, softened (for buttering bread)
1 can (4 ounces) chopped green chilies, drained
2 Tablespoons mayonnaise
1 Tablespoon spicy brown mustard
5 slices Provolone cheese
15 thin slices cooked deli roast beef
1 package frozen French fries

Directions:

1. Bake French fries according to package directions.

2. Butter one side of each slice of bread. These will be the outside pieces of each sandwich. Place bread buttered side down on a baking pan and set aside.

3. In a small bowl, combine the chilies, mayonnaise and mustard.

4. Spread about 1 Tablespoon of the mixture on one (unbuttered) side of each slice of bread.

5. Top one (unbuttered) side of each of five slices of bread with 1 slice of Provolone cheese and 3 slices of beef.

6. Top each sandwich with remaining bread slices.

7. In a skillet sprayed with cooking spray, over medium heat, toast sandwiches for 4 to 5 minutes on each side or until bread is lightly browned and cheese is melted. Serve with French fries. Makes 5 servings.

Sloppy Joe Casserole

Sloppy-Joe-Casserole

Ingredients:

1 1/2 pounds ground beef
1 can (15 1/2 ounces) sloppy joe sauce 
2 cups (8 ounces) shredded cheddar cheese 
2 cups baking mix (Bisquick)
2 eggs, lightly beaten 
1 cup milk 
1 Tablespoon sesame seeds

Directions:

1. In a large skillet, cook beef over medium heat until no longer pink. Drain.

2. Stir sloppy joe sauce into beef. Mix well.

3. Transfer mixture to a lightly greased 13x9 baking dish. Sprinkle cheese over top.

4. Combine the biscuit mix, eggs and milk in a large bowl until just until blended.

5. Pour biscuit mixture over the cheese in casserole. Sprinkle sesame seeds on top.

6. Bake, uncovered, at 400° for 25 minutes or until golden brown. Makes 8 servings.

Bacon Wrapped Beef Patties & Green Beans

Ingredients:

6 bacon strips 
2 eggs, lightly beaten 
3/4 cup crushed saltines 
2 Tablespoons chopped onion 
1-1/2 teaspoons salt 
1/8 teaspoon pepper
1 pound ground beef 
1/2 cup ketchup
2 Tablespoons brown sugar 
1/4 teaspoon ground mustard

Directions:

1. Preheat broiler. We used the high setting, the distance of the food from the heating element determined the cooking time.

2. Place bacon on a microwave-safe plate lined with microwave-safe paper towels. Cover with another paper towel; microwave on high for 2-3 minutes or until cooked but not crisp.

3. Combine the eggs, saltines, onion, salt and pepper in a large bowl.

4. Add beef into mixture and mix well. Shape beef mixture into six patties.

5. Wrap bacon strips around patties; secure with toothpicks. Place patties on broiler pan.

6. Broil 3 to 4 inches from the heat for about 6 minutes.

7. Combine the ketchup, brown sugar and mustard in a small bowl.

8. Turn patties then top with the ketchup mixture. Broil 6 to 7 minutes longer or until meat is no longer pink.

9. Prepare Green Beans with Basil (recipe below) while patties are broiling. Makes 6 servings.

 

Green Beans with Basil

Ingredients:

6 cups green beans 
1/4 cup chopped onion
1 cup water
6 Tablespoons butter, melted
3/4 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon pepper

Directions:

1. Combine beans, onion, and water in a saucepan.

2. Cover and cook for 5 minutes or until beans are tender. Drain.

3. Add the butter, basil, salt and pepper; stir to coat beans evenly. Makes 6 servings.

Biscuit Beef Pockets & Parmesan Noodles


Biscuit-Beef-Pockets

Ingredients:

1 pound ground beef 
14 ounces pizza sauce 
2 teaspoons Italian seasoning
2 tubes (8 ounces each) large refrigerated biscuits
1 cup (4 ounces) shredded cheddar cheese

Directions:

1. Preheat oven to 375°. In a large skillet, cook beef over medium heat until no longer pink; drain.

2. Stir in the pizza sauce and Italian seasoning.

3. Cook over medium heat for 5-10 minutes or until heated through.

4. Press each of the biscuits onto the bottom and up the sides of greased muffin cups.

5. Spoon 2 Tablespoons of the beef mixture into the center of each biscuit cup.

6. Bake at 375° for 15-17 minutes or until golden brown. Prepare Parmesan Noodles (recipe below).

7. Sprinkle tops with cheese, bake 3 minutes longer or until cheese is melted. Serve with noodles. Makes 8 servings.

 

Parmesan Noodles

Ingredients:

6 cups uncooked wide egg noodles
1/2 cup shredded Parmesan cheese
4 Tablespoons butter
1/4 cup Tablespoons olive oil
2 teaspoons dried basil
1/2 teaspoon dried thyme
2 garlic cloves, minced
1 teaspoon salt

Directions:

1. In a small saucepan, cook noodles according to package directions. Drain.

2. Add the remaining ingredients to the noodles and toss to coat. Makes 8 servings.

Muffin Sized Meatloaves and Garlic Mashed Potatoes

Ingredients:

2 eggs, lightly beaten 
1/4 cup milk
1/4 cup ketchup
1/2 cup crushed corn flakes
4 Tablespoons dried minced onion
1 teaspoon prepared mustard
1 teaspoon salt
1/4 teaspoon pepper
2 pounds lean ground beef

Directions:

1. In a large bowl, combine the eggs, milk, ketchup, mustard, corn flakes, onion, salt and pepper.

2. Add beef into mixture and mix well.

3. Divide among 12 greased muffin cups. Press the meat onto the bottom and up the sides of each muffing cup.

4. Bake at 350° for 25 minutes or until meat is no longer pink. Prepare Garlic Mashed Potatoes (recipe below).

5. Serve immediately with ketchup on top of each meatloaf if desired. Makes 6 servings.

 

Garlic Mashed Potatoes

Ingredients:

3 cups water
5 Tablespoons butter, cubed
1 teaspoon garlic powder
3/4 teaspoon salt
1/4 teaspoon pepper
1 cup milk
3 cups mashed potato flakes

Directions:

1. Combine the water, butter, garlic powder, salt and pepper in a large saucepan . Bring to a boil.

2. Remove from the heat and add milk.

3. Stir in mashed potato flakes with a fork. Makes 6 servings.

Tater Tot Tacos


Tater-Tot-Tacos

Ingredients:

6 cups frozen Tater Tots
1 1/2 pounds ground beef
6 Tablespoons taco seasoning
1 1/2 cups shredded cheddar cheese 
3/4 cup sliced ripe (black) olives 
3 cups shredded lettuce 
6 Tablespoons taco sauce 
3/4 cup sour cream

Directions:

1. Bake Tater Tots according to package directions.

2. While Tater Tots are baking, cook beef in a large skillet over medium heat until no longer pink. Drain.

3. Stir in taco seasoning. Divide Tater Tots between serving plates or bowls.

4. Top with taco mixture, taco sauce, cheese, olives, lettuce, sour cream. Makes 6 servings.

Stuffed French Bread Cheeseburger with Onion Rings


Stuffed-French-Bread-Cheeseburger

Ingredients:

1 pound ground beef 
1/4 cup chopped onion 
1 can (10-3/4 ounces) condensed tomato soup, undiluted 
1/2 teaspoon garlic salt
1/4 teaspoon salt 
1/4 teaspoon pepper
1 loaf (1 pound) unsliced French bread
1 Tablespoon butter, softened 
8 ounces plain process cheese (Velveeta), sliced
1 package frozen onion rings

Directions:

1. In a large saucepan, cook beef and onion over medium heat until meat is no longer pink. Drain.

2. Add tomato soup, garlic salt, salt and pepper. Simmer mixture, uncovered, for 5-10 minutes.

3. Bake onion rings according to package directions.

4. While onion rings are baking, slice the top third off the bread. Hollow out bottom half of loaf, leaving a 3/4-inch shell. Spread butter on top third of bread.

5. Once onion rings have finished baking, place hollowed out bread loaf on an ungreased baking sheet and broil 4 inches from the heat until lightly browned (30 seconds to a minute).

6. Spoon beef mixture into hollowed out bread shell; arrange cheese slices on top.

7. Broil 2 to 3 minutes longer or until cheese is melted. Replace bread top. Makes 6 servings.

all of these sounds so good. take ground beef and cook it in butter with a can of diced potatoes.
