Ravioli with Tomato-Alfredo Sauce

Ingredients:

2 packages (9 ounces each) refrigerated dried tomato or cheese filled ravioli
1 package (8 ounces) sliced mushrooms
1 large onion, coarsely chopped (1 cup)
1 jar (28 ounces) spaghetti sauce
½ cup half-and-half
¼ cup grated Parmesan cheese
¼ cup chopped fresh parsley


Directions:

1. Cook and drain ravioli as directed on package, keep warm.

2. Spray same saucepan with cooking spray, heat over medium heat.

3. Cook mushrooms and onion in saucepan about 5 minutes, stirring frequently until onion is crisp-tender.

4. Stir in spaghetti sauce and half-and-half. Heat to boiling, reduce heat.

5. Stir in ravioli, cheese and parsley. Serve with warm buttered Italian bread. Makes 6 servings.

Tuna Cheese Melts and Potato Salad

Ingredients:

½ cup sour cream
½ teaspoon garlic salt
8 slices light rye bread
1 can (6 ounces) tuna, drained and flaked
2 Tablespoons mayonnaise
4 slices American cheese
4 Tablespoons butter, divided
1 pound deli potato salad


Directions:

1. In a small bowl, combine sour cream and garlic salt. Spread on one side of each slice of bread.

2. In another small bowl, combine tuna and mayonnaise. Spread on 4 slices of bread.

3. Top with cheese and remaining bread, gently press together.

4. Melt 2 Tablespoons butter in a large skillet over medium heat.

5. Add two sandwiches, toast sandwich is until bread is lightly browned on both sides and cheese is melted.

6. Repeat with remaining butter and sandwiches. Serve with deli potato salad. Makes 4 servings.

Garlic Lime Shrimp and Pasta

Garlic Lime Shrimp and Pasta recipe

Ingredients:

1 pound uncooked large shrimp, peeled and deveined
5 garlic cloves, minced
½ teaspoon salt
¼ to ½ teaspoon cayenne pepper
½ cup butter
3 Tablespoons lime juice
1 Tablespoon minced fresh parsley
Hot Cooked pasta


Directions:

1. In a large skillet, sauté the shrimp, garlic, salt and cayenne pepper in butter until the shrimp turns pink (about 5 minutes).

2. Stir in lime juice and parsley.

3. Serve with pasta and warm buttered Italian bread. Makes 4 servings.

Curried Shrimp and Rice

Curried-Shrimp-and-Rice 

Ingredients:

1 Tablespoon olive oil
1 large onion, chopped
2 cloves garlic, chopped
2 teaspoons curry powder
1 cup long-grain white rice
2 1/2 cups water
1/2 teaspoon salt 
1/2 teaspoon pepper
1 1/2 pounds large shrimp, peeled and deveined
additional 1/2 teaspoon salt and 1/4 teaspoon pepper
1/2 cup fresh basil, finely chopped

Directions:

1. Heat the oil in a large skillet over medium heat.

2. Add the onion and cook, stirring occasionally, until soft (about 6 to 8 minutes).

3. Add the garlic and curry powder and cook for 2 minutes, stirring often.

4. Add the rice, 2 1/2 cups water, 1/2 teaspoon salt, and 1/2 teaspoon pepper and bring to a boil.

5. Reduce heat to medium-low, cover, and simmer for 15 minutes.

6. Season the shrimp with 1/2 teaspoon salt and 1/4 teaspoon pepper and place them in the skillet, covering them in the partially cooked rice.

7. Cover and cook until the shrimp are fully cooked, about 4 to 5 minutes. Add the basil, mix well and serve.

Tex-Mex Lasagna

Ingredients:

nonstick cooking spray
6 (10 inch) flour tortillas
1 (15 ounce) can tomato sauce
1 (15 ounce) can black beans, rinsed and drained
1 cup frozen whole kernel corn
½ cup chopped green onions
1 (8 ounce package) sliced Colby Jack or shredded Mexican-style four-cheese blend
sour cream
salsa


Directions;

1. Preheat oven to 400 degrees F. Lightly coat a 3-quart rectangular baking dish with nonstick cooking spray, set aside.

2. Cut tortillas in half, cover bottom of dish with 4 of the tortilla halves, cut side facing edge of dish.

3. Layer with one 1/3 each of the tomato sauce, beans, corn, green onions, and cheese.

4. Repeat layers twice. Cover with foil; bake for 20 minutes or until heated through.

5. Serve with sour cream and salsa. Makes 6 servings.

Rotini with Broccoli in Alfredo Sauce

Ingredients:

1 (16 ounce) package dried rotini pasta
12 ounces broccoli, cut into bite-size pieces
1 small red sweet pepper, cut into bite-size strips
1 cup whipping cream
1 egg yolk
½ cup butter, melted
1½ cups finely shredded Parmesan cheese


Directions:

1. In a large pot, cook pasta according to package directions, adding the broccoli and sweet pepper for the last 4 minutes of cooking time.

2. Meanwhile, in a small bowl whisk together cream and egg yolk, set aside.

3. Drain pasta and return to pan.

4. Add cream mixture, butter, and Parmesan cheese.

5. Cook and stir over low heat for 2 to 3 minutes or until heated through. Makes 6 servings.

8 ounces broccoli florets(about 2 cups)
8 ounces cauliflower florets (about 2 cups)
1½ cups milk
3 Tablespoons flour
1 teaspoon salt
¼ teaspoon black pepper
1 cup grated Parmesan cheese
¼ cup oil packed dried tomatoes, well drained and chopped


Directions:

1. In a 4 to 6 quart pot, cook pasta according to package directions, adding broccoli and cauliflower the last 4 to 5 minutes of cooking time. Drain and return to pot.

2. Meanwhile, in a medium microwave safe mixing bowl whisk together the milk, flour, salt and pepper.

3. Microwave on 100% power (high) for 3 to 4 minutes, stirring every 30 seconds until thickened.

4. Add the milk mixture, Parmesan cheese, and dried tomatoes to cooked pasta in pot. Stir gently to combine. Makes 6 servings.

Quick Cheesy Macaroni

Ingredients:

8 ounces dried penne pasta
2 cups loose-pack frozen cauliflower, broccoli, and carrots
1 (10 ounce) container refrigerated Alfredo pasta sauce
¼ cup milk
1 cup shredded cheddar cheese (4 ounces)
½ cup finely shredded Parmesan cheese
¼ cup chopped walnuts, toasted


Directions:

1. In a 4 quart pot, cook pasta according to package directions, adding frozen vegetables for the last 4 minutes of cooking. Drain well.

2. Return pasta to pot, cover and keep warm.

3. Meanwhile, in a medium saucepan combine Alfredo sauce and milk; heat and stir just until bubbly.

4. Gradually add cheddar and Parmesan cheeses, stirring until melted. Add cheese mixture to pasta mixture in pot, stir to coat.

5. Heat through. Top with toasted walnuts. Makes 4 servings.

Barbecued Shrimp with Pecan Rice


Barbecued Shrimp with Pecan Rice

Ingredients:

2 teaspoons olive oil
1 cup chopped onion
2 cups converted white rice
3 cups chicken broth
½ cup chopped pecans, toasted
2 Tablespoons chopped fresh parsley
½ cup steak sauce
6 Tablespoons cider vinegar
6 Tablespoons ketchup
6 Tablespoons packed light brown sugar
3 Tablespoons bourbon
2 teaspoons hot pepper sauce
2 pounds medium shrimp, shelled and deveined


Directions:

1. Heat the oil in a nonstick saucepan over medium heat.

2. Add the onion and cook until tender and golden, about 5 minutes.

3. Add the rice, stirring to coat well, and cook until begins to turn golden (about 3 minutes).

4. Add the broth and bring to a boil. Cover, reduce the heat, and simmer until broth has evaporated and rice is tender (about 20 minutes).

5. Remove from heat and stir in the pecans and parsley.

6. Mix the steak sauce, vinegar, ketchup, brown sugar, bourbon, and pepper sauce in a bowl until blended. Add the shrimp and toss to coat.

7. Heat a nonstick ridged grill pan over medium-high heat. Grill the shrimp until pink and lightly browned, about 3 minutes.

8. Turn the shrimp and cook until nicely browned, about 2 minutes longer.

9. Spoon the rice onto a platter and top with shrimp. Makes 4 servings.

Herbed Crusted Shrimp with Oven Fries

Ingredients:

¼ cup chopped fresh basil
¼ cup chopped fresh mint
¼ cup chopped fresh parsley
¼ cup chopped cilantro
2 garlic cloves, minced 
2 Tablespoons fresh lemon juice
1 Tablespoon olive oil
½ teaspoon salt
¼ teaspoon ground black pepper
1½ pounds large shrimp, peeled and deveined
1 package frozen French fries


Directions:

1. Bake French fries according to package directions.

2. While French fries are baking, coat a baking sheet with nonstick spray.

3. Combine the basil, mint, parsley, cilantro, garlic, lemon juice, oil, salt, in pepper in a bowl.

4. Add the shrimp and toss to coat.

5. Arrange the shrimp in a single layer on a baking sheet.

6. When French fries are done baking, set the oven to 450 degrees F.

7. Place the shrimp in the oven; bake until opaque and cooked through (about 6 minutes).

8. Serve the shrimp with the French fries. Makes 4 servings.
