After we moved to the Gulf Coast in Florida, we found a great bread on the local restaurants' menus. We loved it so much I decided to make our own. Our Sandy Hook Restaurant was good enough to give me their ingredients and I'm sharing with you. You'll love it, even as a snack or quick lunch.
Several soft sub rolls
Blue Cheese salad dressing
Spinach, fresh or steamed and drained
Mozzarella cheese, grated
Slice the sub rolls down the middle, lengthwise and place
on a cookie sheet, cut side up. Spread a good amount of
blue cheese dressing or garlic butter over the cut side
of the rolls.
top with mozzarella, covering tomatoes well. Add parmesan
cheese if you like.
with the broiler on. You can bake at a high oven temperature
instead, but either way, watch to make sure you don't burn the
cheese, just melt and heat through.
