Applesauce Pie - allrecipes.com

    1 (8 inch) prepared graham cracker crust
    1 cup sweetened condensed milk
    1 cup applesauce
    2 teaspoons apple juice
    1/4 teaspoon ground cinnamon, or to taste
    2 eggs

Preheat oven to 350 degrees F (175 degrees C).
Mix the sweetened condensed milk with applesauce in a saucepan, and thin with apple juice. Whisk in cinnamon; bring to a boil. Beat the eggs in a bowl; whisk 1 tablespoon of the hot applesauce mixture into the eggs; whisk 1 more tablespoon of applesauce mixture into the eggs, and repeat, mixing in 1 tablespoon at a time, until about 1/3 of the applesauce mixture is whisked into the eggs. Return the egg mixture to the saucepan with the remaining applesauce mixture, and whisk until smooth. Pour the filling into the crust.
Bake until the filling is set, about 1 hour; allow to cool before serving. Refrigerate leftovers.

                  Banana Bread

3-4 ripe bananas smashed                       1 tsp baking soda
1/3 c melted butter                               pinch of salt
1 c sugar                                               1 tsp vanilla
1 egg beaten                                         1 1/2c flour
appr. 1c chocolate chips (optional)

-preheat oven 350 dergrees. Spray bread pan with oil spray.
-with wooden spoon, mix butter into mashed bananas in lg. bowl.
-mix in sugar, egg, & vanilla.
-Sprinkle baking soda & salt over mixture and mix in. Add flour in last and mix. If adding chocolate chips, fold into mixture.
-Bake 1 hr. Cool 1 hr before removing.

Chicken Pot Pie
 
 
Ingredients
1 lb chicken breasts, cubed
1 cup sliced carrots
1 cup frozen peas
1/2 cup sliced celery
1/3 cup butter
1/3 cup onions, chopped
1/3 cup all-purpose flour
1/2 tsp salt
1/4 tsp pepper
1/4 tsp celery seed
1 can chicken broth
2/3 cup milk
2 9" unbaked pie crusts
 
Directions
1. Preheat oven to 425 degrees.
2. In sauce pan, combine chicken, carrots, peas and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.
3. In the sauce pan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper and celery seed. Slowly stir in chicken broth and milk. Simmer over med-low heat until thick. Remove from heat and set aside.
4. Place chicken mixture in bottom pie crust. Pour hot liquid mixture over chicken mixture. Cover with top crust, seal edges and cut away excess dough. Make several small slits in top to allow steam to escape.
5. Bake 30-35 minutes until pastry is golden brown and filling is bubbly. Cool 10 minutes before serving.

Dutch oven beef burgundy


2 lb round roast
2 pkgs instant beef gravy (and water as instructions say)
1 clove garlic
1/4 tsp oregano
1 med onion
16 oz sliced mushrooms
1/2 cup burgundy wine
4 Tbsp butter
1/2 pint sour cream
Slice onions.
Cut beef into 1 inch cubes.
Melt butter in Dutch oven-med heat
Saute garlic, mushrooms and onions in butter until onions are clear.
Remove onions/garlic
Brown meat in the drippings.
Add beef gravy, wine, salt, pepper and onions to pan.
Cover and simmer 20 min.
Stir in sour cream.
Serve over rice or noodles for 6 to 8 people.

EGG SALAD

Ingredients
  • 4 eggs
  • 4 tablespoons mayonnaise
  • 2 teaspoons sweet pickle relish
  • 2 tablespoons green onion, finely chopped
  • salt to taste
  • freshly ground pepper to taste

  • Fill a small sauce pan with enough water to just cover eggs and bring to a full boil. Reduce heat to low and cover. Cook eggs for about 10 minutes.
  • Remove from heat, drain, and immediately cool eggs with cold running water.
  • Peel eggs and finely chop. Add mayonnaise, pickle relish, chopped onion, salt, and pepper and mix. 
  • Spread on bread of your choice. Garnish with lettuce or sprouts (optional).

Olive oil
1 egg
1/4 & 18 c parmesan cheese
1/4 & 1/8 bread crumbs 1/2 tsp oregano
1/2 tsp basii
Salt / pepper
1 eggplant sliced
3 c sauce
1 c mozzarella cheese
2 tbls parmesan cheese


Preheat oven 375 kdegrees. Spray baking sheet wit oil.
Whisk egg & 2 tbls water. In another bowl mix bread crumbs & parmesan cheese, oregano, & Basil.
Dip slices of eggplant in egg mixture letting excess drip off. Then dredge in bread crumbs mixture coating well. Place on baking sheet. Bake until golden brown on the bottom about 20-25 min. Turn over bake other side til brown. Remove from oven & turn up oven to 400 degrees.
Spread 2 c sauce in baking dish. Arrange 1/2 eggplant in the dish.cover with sauce, then with 1/2 mozzarella cheese. Repeat with remaining ingredients. Sprinkle with remaining 2 tbls parmesan cheese.
Bake an additional 15-20 min. til sauce is bubbly.

Grilled Chicken

1 tsp. brown sugar

1 tsp. seasoning salt

1 tsp. paprika

1 tsp. black pepper

1 tsp. garlic powder

1 Tbsp. olive oil (vegetable oil works, too)

2 to 3 Tbsp. water

4 chicken leg quarters

Mix all marinade ingredients in a zip-lock plastic bag and add chicken. Chill for 4 to 6 hours. Grill chicken over low heat, turning once, until well browned on both sides (about 40 minutes). Meat near bones should no longer be pink when tested with the tip of a knife.
