I was asked to bring some kind of finger sandwiches to a cub scout even this weekend. Adults will be eating too. Anyone have any ideas? I want to keep it fairly simple.

Why not just buy the meat and have bread, lettuce and cheese and whatever else out and have them make their own?

Then I would just put meat (ham or turkey) and bread possibly lettuce. No cheese, mayo or whatever.

You have no idea about allergies.

For finger sandwiches, it's usually ham salad, chicken salad (minced very fine) or some other salad. doing meat & cheese, lettuce and tomato falls apart too easily for tiny sandwiches. You can do just deli ham or turkey with the bread spread with butter, which will help hold them together. Cucumber spread is also nice. You can either buy the loaves of cocktail breads or make the sandwiches and cut into 4 pieces.

I would just do ham and cheese on some then add lettuce to others for adults

You could also do wrap pinwheels.

Cucumber and Cream Cheese Tea Sandwich

Cucumber and Cream Cheese Tea

Cucumber sandwiches are one of the classic tea sandwiches. By adding a little bit of cream cheese, these usually delicate sandwiches have extra substance.
  • 2 small slices white bread, ends trimmed
  • 2 teaspoons unsalted butter, softened
  • 2 tablespoons whipped cream cheese
  • 4 1/4-inch slices of English cucumber
  • Pinch of salt
Spread one teaspoon of butter on each slice of bread. Spread one tablespoon of cream cheese on top of each buttered slice. place cucumber slices on one slice of bread. Add a pinch of salt. Top with the other bread slice and press together. Make a diagonal cut across sandwich to make two triangle tea sandwiches.

Classic Chicken Salad Tea Sandwich Recipe

Chicken Salad Tea Sandwiches

Chicken Salad sandwiches are popular tea sandwiches. The fresh tarragon in this recipe makes them extra special.
  • 2 small slices brown bread, ends trimmed
  • 1/2 cup diced cooked chicken
  • 2 tablespoons mayonnaise
  • 1 tablespoon chopped celery
  • salt and pepper to taste
Mix together the diced chicken and mayonnaise. Stir in the chopped celery. Add salt and pepper to taste. Spread chicken salad on one slice of bread, top with the other slice and gently press together. Make a vertical and horizontal cut across sandwich to make four small square tea sandwiches.

Thanks for all the ideas! I'm leaning toward salad sandwiches.
