Does it matter what brand you buy? Does it impact quality? I was asking because I bought a BIG jug at Sams and I think it might be what gives my salad dressings an "off" taste.

I never noticed a different and I make a pasta thats base is olive oil, thyme and parsley. I use a variety of kinds too. Maybe you should have bought extra virgin or vice versa??

I buy extra virgin olive oil but I've never paid attention to what kind. I just get what is the cheapest cause it lastest forever.

It is extra virgin. Just everything ends up bitter.

We have never tried olive oil.  I just googled.  Try this site it is packed with info on how to buy/choose olive oil

http://www.oliveoilonly.org/

Info from the site:

Storing Olive Oil

The flavor, taste and chemistry of olive oil is best protected by dark glass bottles or tins. This is because olive oil deteriorates with exposure to light. Plastic bottles can affect the taste of olive oil. It is best to store olive oil in a cool place. If your olive oil is in a clear class or plastic bottle, then it is best to keep it in dark place. Heat, light and air can all cause oxidation in olive oil which will ruin the flavor and decrease the health benefits. If Extra Virgin Olive Oil is put in the refrigerator, or in similar cold conditions, it will harden up and appear cloudy. This does not affect the quality of the oil at all. If your olive oil that is labeled “extra virgin” does not cloud up when it is cold it might mean that the bottlers put refined olive oil in with it, as it does not show as much clouding.

I buy extra virgin, either imported from an EU country, or organic. I especially love Spanish and Greek olive oils

I wonder if the oil is rancid. Good olive oil smells kind of fruity. How does this jug smell?

 The oil could be bad.

I am thinking this might be the case. Even stuff i have pan fried, after i wash the pan, if i try making something different, like pancakes, i have gagged because they picked up the flavor of that oil.

I bought a bottle of vegetable oil once that was like that, I ended up throwing it away.
