Easy Potato Soup

This is a quick, easy and cheap recipe for yummy potato soup.

heat up a couple of cans of condensed potato soup

then add milk and frozen hashbrowns(diced not shredded) until you get the consistency you want.

heat until hashbrowns are soft

top with cheddar, bacon and scallions.

tastes great and is ssooo easy

I pour some olive oil in a pot, add frozen sliced leeks, sautee, add scrubbed and cut yukon golds, cover with vegetable stock. Simmer for a couple of hours, season with a little black pepper, refrigerate overnight. Heat and top with plain greek yogurt
