Homemade Velveeta Cheese
http://www.mamas-southern-cooking.com/velveeta-cheese-recipe.html

1/2 lb. Cheddar cheese, grated
1/2 cup almost boiling water
3 tablespoons of instant dry milk
1/2 tsp. unflavored gelatin

Spray an 8x4x2 loaf pan and line it with plastic wrap, enough to also cover the top of the pan when filled. Set aside.

To a blender, add the hot water, instant milk, and gelatin. Mix until the gelatin has dissolved. Next, add the grated Cheddar cheese and blend until it is a liquid.

Pour into the prepared loaf pan. Cover with the plastic wrap and chill overnight before you take it out of the mold.

Cool!  My first thought was how do you make home made plastic cheese? lol  This sounds like a little bit more natural way to eat velveeta. :)

Well, I am going to try it at some time.  I love Velveeta...but we have sodium restrictions...so I'm hoping I can make a lower sodium nacho type dip.
