I would make what she likes for now but offer new things occasionally.
Don't limit breakfast to "breakfast foods". Smoothies, toast with mashed avocado, and hummus are all great options.

Kid notoriously go through a growth lull around the age of 1-2ish where their growth significantly slows from the pace it is going in the first year and they become "picky" but in all reality they will not truly become picky IF you continue to offer them a healthy variety of foods. Just continue to give her good choices. If she eats she eats, if she doesnt she doesnt. Dont make "something else" if she chooses not to eat or give in to letting her just eat a select few foods just to get her to eat something. Those supplemental drinks are a slippery slope too, they fill them up so they are not hungry for "real" food.
Unless there is a medical issue a child will not allow themselves to starve and while she may seem like she is not eating enough to keep a bird alive, she IS eating what her body needs.
