Budget

Any meal ideas for a family that is on a budget? My husband & toddler are also picky on what they eat so its a little hard at times (he dont like veggies & she has days she just dont like/want anything).

We are kind of in the same boat. DH is limited on veggies and what he likes. And our toddler, well, if she doesnt like dinner, i make her try it first, but then she gets a PB&J. I have snuck veggies into things like meatloaf. I would add a couple jars of baby food carrots into pasta sauce all the time.

Hmm I like the way you think Lol good idea on adding baby food carrots to pasta sauce. My LO loves fresh veggies but we cant always afford them, so Im always all ears for ideas.. Thank you.

We did alot of pasta, sloppy joes, stuff like that when money was tight.

 Sometimes I fix breakfast for dinner.  It's a family favorite that everyone can agree on and budget friendly.  Make more meatless dishes to save money, too, like grilled cheese w/ tomato soup or cheese enchiladas.

There have been several times that we have been really broke. One of the go to meals has been a can of chicken (just like tuna but chicken) a pack of chicken gravy and rice. You make the gravy, add the chicken and whisk then serve it over rice.

Then there are also dried soups. I love Bear Creek. It is about $4 a bag. You boil 8 cups of water and then add the soup. Its a whole meal. Chicken Noodle (no meat in it, though you could add it) and broccoli cheddar are my favs. They also have several others though.

I understand how I feel. I use a lot of hamburger near. Cuz it's the cheapest I make this casserole everyone here loves I double it but here's the original recipe.
1lb hamburger meat
1 can cream of chicken soup
Frozen tater tots
Shredded cheese
Ground meat mix with soup place in casserole. Top with tater tots cook until tots are done then add cheese cook til melted.
It's surprisingly fabulous.

Tuna casserole is pretty cheap to make.. Mac & cheese mixed with tuna.  I usually put broccoli or peas in mine, and do a bread crumb crust.
