Hey everybody! I just discovered this quick and easy dish that feeds my family of three two meals. It is my own creation. Here are the ingredients.
1) Approx. 1 pound of Bacon Ends and Pieces
2) 1 Family size can Cream of Mushroom soup
3) 2 pieces Boneless, Skinless Chicken Breast
4) 1 16oz box Mostaccioli Pasta
5) 1 bag Baby Spinach
6) 2 Tablespoons Fresh Minced Garlic
7) 1 Stick of butter
8) Salt and Pepper to taste
9) Grated Parmesan Cheese
Start off by cutting the boneless skinless chicken breasts into chunks. However big you want them. I usually cut the breasts in half and cut them into about 1 inch cubes. Put your now cubed chicken breasts in a skillet along with your stick of butter and your bacon. It takes between 10 and 15 minutes for it all to cook down and make sure your meat is fully cooked. Remember to stir so it doesn't stick to the pan.
While your meat is cooking make your pasta. When your pasta starts boiling again add your garlic. Two minutes before your pasta is finished cooking add your baby spinach.
Drain your chicken and bacon mixture and return to pan.
Drain your pasta mixture.
Add chicken and bacon mixture to your pot.
Return your pasta mixture to the pot.
Add your Cream of Mushroom Soup and Parmesan Cheese. Mix well.
In case you are wondering where I got the bacon ends and pieces from, I got them from walmart. they come in a pretty large bag. I quarter it and freeze what I am not using.
