Recipe of The Week, April 29: Broccoli Gratin
My family loves broccoli with cheese sauce, but AI was hoping to find a recipe that I could cook in the oven and not have to be making a sauce at the last minute while I was trying to get the rest of dinner on the table. I found this one, and they absolutely love it. It's a winner.
prep: 15 minutes
cook: 26 minutes
2 (16 oz) packages fresh broccoli florets (I used 1 head broccoli)
1 ½ cups mayonnaise (can use low-fat if desired)
1 cup (4 oz) shredded cheddar cheese (can use low fat)
1 (3 oz) package shredded Parmesan cheese
4 green onions, sliced
2 Tablespoons Dijon mustard (one time I was out of Dijon, so I used 1 teaspoon dry mustard)
3 Tablespoons Italian-seasoned breadcrumbs
Preheat oven to 350. Arrange florets in a steamer basket over boiling wter. Cover and steam for 6-8 minutes or until crisp-tender, (or steam in microwave). Drain well
Arrange florets in a lightly greased 2 qt baking dish.
Stir together mayonnaise and next 5 ingredients. Spoon over florets, and sprinkle with breadcrumbs.
Bake at 350 for 20-25 minutes or until golden brown.

This is also very good combined with cauliflower.
