Even my 2 year old gobbled this down so I had to share!
Heat a little oil in a pan, enough to coat the bottom of pan. Coat chicken in cracker or bread crumbs. Brown chicken on both sides and remove from pan. In same pan, saute 1 cup chopped onion with 1 tbsp italian seasoning. Cook for a minute or two. Add 3 plum tomatoes chopped. Cook for a minute. Add 1/4 cup chicken broth or white wine and bring to boil. Once boiling, add 1 jar alfredo and reduce to simmer. Place chicken back in pan and simmer 10-15 minutes, until done.
Meanwhile cook spaghetti as directed on package. I used half a box but I had enough sauce to probably use the whole box. Drain and once chicken is done toss with sauce. Top with chopped fresh basil.
