Don't eat it-never in 13 years of marriage have I made it-but next door neighbor brought a few small ones over and gave to hubby.

Hubby will eat them-I asked what I should do with them-he said I could bake them like potatoes-but that sounds boring.

Any suggestions?

 I cut mine in slices and then quarter the slices...marinate in Italian Dressing for how ever long you like...I do mine all day in the fridge. Then put them in a baking dish and bake at 350 until tender! LOVE them that way...I also use zucchini with this too. The Italian Dressing takes away the bland flavor!

oh my yes... lots.

you can chop it up and put it just about anything. spaghetti is one kids will eat. just cook them in the pan (like you would onions) first. Chili, or vegitable soup. You can replace zuccini with them in just about anything. fajitas. pot roast. heck if you want, you can make chips out of it. I chopped it up kinda fine once and put it in veg lasagna. squash and a can of pumpkin make a good soup. i make mine sweet and spicy, with other fall veg. if any of those sound good for you i can give you a recipe if you want.

 I slice them and 1. cook them w/onions, garlic, mushrooms (and sometimes zucinni) in a skillet, 2. bread them and fry them than dip then in ranch, 3.

I do mine three ways

1. I coat them in flour, egg and then cornmeal and fry them (they are super yummy)
2. I roast them (probably what DH is talking about) by coating them with EVOO and salt, pepper, and garlic powder and roast in a 400* oven until they caramelized a bit.
3. I grill them, using the same EVOO, salt. Pepper and garlic powder.

I love yellow squash!

FRY THEM!

Cut them up in 1/4 inch slices. Cover in flour, shake around then take the zucchini out of the flour shaking off exess flour, dip in in egg & milk mixture...followed by panko crumbs, and fry for about 4-6 minutes flipping them around. Place them on paper towel & toss with a little salt. They're incredible!

eat with ranch dressing, or ketchup. It's amazing.

- You can also grate them like you would grate cheese, mix with flour & egg, salt & pepper & fry them in a skillet in bunches...kind of like potato latka's but with zucchini instead.

OR simply slice  them up & saute with butter, onion& garlic.

You can also grill them. Slice leangth wise, Cover in olive oil, add salt, pepper and what ever other spices you like...and grill it till you have nice char marks on either side.

 My mom sautes them and then adds teriyaki.
