I am not much of a cook. Its hard when I am always at my moms becuase my husband is overseas. Its tough to cook for me and alittle one and not have tons of left overs. I can only eat left overs for certains things. Any suggestions, of healthy and easy things for me and a 17 month old?

 Welcome! I have the same issue when I cook for myself and most of the time I just dont do it. I cook every single day when DH is around but if he happens to be gone for a night or something, I usually take dd through drive thru. I cannot imagine him being gone for 6 months at a time....I wouldnt like cooking for just one either!

ITs not fun. He is gone for a year. So its like what do I do. I should be learning to cook more for when he gets home, but for myself I rather not

When you first buy your grooceries, SPLIT THE MEATS UP!  Realistically, for two and since you don't eat leftovers, two boneless chicken breasts to a pack, half pounds of ground turkey or hamburger to a pack, you get the idea.  Secondly, make homemade biscuits and such.  They are wickedly easy (self-rising flour, milk and butter) and just eye it until you think it's enough for you and your little one.  You can cut up one potato into cubes or fries and it is enough for two. Cubes you can put garlic and rosemary on or a seasoning pack of hidden valley ranch and bake them (be sure to put either water or olive oil in the bottom to help them cook.)  Cake for two?  (3tbsp ap flour, 3tbsp sugar, 3 tbsp baking cocoa powder, 1 egg, 3tbs milk, 3tbsp oil, chocolate chips, splash of vanilla - Mix dry ingredients together, then the egg (mix again), then the milk and oil (mix again), then the chocolate chips and vanilla.  Place in coffee cup and cook for 2minutes and 30 seconds.  Let cool and serve.)  You can make homemade alfredo sauce (cream cheese, milk, butter, parmesan, and garlic powder.)  If you need more ideas, feel free to message me!  :)

LOL!  Thank you thank you, ma'am!  I've been cooking since I was 12 or so and thanks to my mom, dad, grandma, and so many other people I know and love, I feel I have become completely amazing at it! :)
