This recipe from the-girl-who-ate-everything.com sounds and looks delicious. She says her kids love it.
Taco Pasta
Source: adapted slightly from Fake Ginger
Ingredients:
1 pound ground beef or turkey
8-12 ounces medium pasta shells or other small dry pasta shapes
1 small onion, chopped (about 1 cup)
1 clove garlic, minced
1 (14 oz.) can diced tomatoes with mild green chilies, drained (if making this for kids you might want to use just plain diced tomatoes)
1 packet (4 tablespoons) taco seasoning
3 ounces cream cheese
1/2 cup sour cream
1/4 cup chopped cilantro
Salt and pepper
Instructions:
Bring a large pot of water to boil. Cook pasta according to the package directions. Drain, reserving 1/2 cup of pasta water. Set aside.
Meanwhile, in a large skillet or sauté pan, cook the ground meat over medium-high heat until no longer pink. A few minutes before the meat is cooked through, add the chopped onion to the skillet. Once the meat is cooked through, mix in the garlic and cook until fragrant, about 30 seconds. Add in the diced tomatoes and taco seasoning and let simmer over medium heat for about 3-5 minutes.
Stir in the cooked pasta, cream cheese, sour cream and reserved pasta water, and continue stirring until the cream cheese is melted and the sauce is well blended. Season with salt and pepper to taste. Simmer over medium-low heat 3-5 minutes to reduce the sauce a bit if it is still too thin.
Toss in the cilantro right before serving for some fresh color and flavor. Serve with a green salad.

When you say 'with lots left over,' how much is 'lots?' I am going to a family reunion where there will be 20 ppl attending. Does this recipe make enough for everyone to have some? Its a potluck reunion. I just don't want to show up and not have enough for everyone to get some--kwim?

As a rule of thumb...1 lb of meat is usually meant to serve 4-5 people. 8-12 oz of pasta will serve 4-6 as a main course. Since there will be a lot of food and people will probably take a small portion, I would double it.

Thanks for the kind words. I've been cooking for a long time and worked in the food industry. I have collected recipes from friends and colleagues, moms on here, and restaurants. I have a large collection of cookbooks, and I like to experiment and change and combine recipes and come up with things that I think my family will like, and that I'll like to cook.

I spent a couple of hours this morning going thru the recipes listed on this forum, and the ones that you submitted, all just sound amazing! : ) I will definately be making a lot of your recipes and I will definately let you know how they turned out and if my family liked them! Unfortunately, my kids are very, very picky eaters! : ( Two of my boys just got back from Scout Camp. They are so picky, they took their own bread and peanut butter with them to camp in case the food at camp is so 'yucky,' they will atleast have peanut butter sandwiches!! Crazy kids!! ROFL!! ROFL!! What I always find so frustrating at restaurants, is when they erve something that is SOOO YUMMY, and they don't give out the recipe! I mean I totally understand 'why' they don't give out their recipes, but it can be so annoying. I LOVE Todd Wilbur who does the Top Secret restaurant recipes!! He does an amazing job!! I love trying out new recipes, so I am going to have so much fun trying out recipes from this forum! Are you the Administrator or whatever of this forum? Just curious.

That's frustrating when you're trying to cook for picky eaters, but I hope you'll have fun trying out recipes. I'm just one of a group of moms who like to cook and share recipes on here and are moderators for the group.

I made this yesterday (7/29) and it was REALLY YUMMY!! I took it to our annual family reunion! Everyone said how delicious it was! I accidently forgot the cilantro--darn it! Oh well. It does make a huge difference in the flavor though! I had some taco pasta for lunch today and added cilantro! I could also see how adding sliced black olives and green chilies would really add more flavor to this dish as well!
I always drain meat, too, regardless of whether it says to or not. It gets rid of a lot of excess fat.
I've made this once since I posted that my daughter did, and again, it was very good.
