This is good for summer.Sometimes I leave out the lettuce, and it's good that way, too..

Cauliflower Pea Salad

1 medium head ncauliflower
1 medium head iceburg lettuce, torn
1 (10 oz) pkg frozen peas, thawed
3/4 cup mayonnaise
2 1/2 Tablespoons grated Parmesan cheese
1 Tablespoon sugar
8 slices bacon, cooked, crumbled
Wash cauliflower and break into flowerets. Combine cauliflower, lettuce & peas in large salad bowl. Combine mayo, cheese and sugar in small bowl. Stir well. Pour over vegetable mixture. Sprinkle with bacon. Toss gently. Serve immediately.

This is interesting! I have tried making just a pea salad before and it was not a favorite.

Yum, I love peas and cauliflower but nobody else in my house likes them.  :(

Can you recommend a good substitute for the mayo?  Would ranch dressing work?

I'm really not sure this would work well, but then again it might, because the base of Ranch dressing is mayonnaise. Is it that you don't like the taste of  mayonnaise? If that's the case, it doesn't taste like mayonnaise.

Eww, yes, I hate mayo.  And I know there's mayo in lots of things I eat (like ranch and honey mustard) but knowing that I made something and had to put mayo in it.....I think it would be in my head that it was in there so I'd convince myself I didn't like it.
