Quoting Mrs.Greco:I make a lot of my meals ahead of time(veggie lasagna and casseroles) and freeze them. That way I can stick them in the oven and whip up a salad or something to go with it. It's a lot less clean up after dinner too. I even freeze twice baked potatoes. They taste just as great! I'm a vegetarian, so pasta is always quick to make for us too :)
Crockpot recipes might be helpful as well. I have seen several in this group.
I double cook and freeze half for later, then in the morning put frozen meal in refrigerator to thaw, that night put it in oven to reheat. Most casseroles freeze well, like shepherd's pie, chicken pot pie, baked ziti, also chili, soups.
Tuna Melts- slather it onto bread of your choice (this is a great way to use up left-over hamburger buns), top with cheese of your choice; throw 'em under the broiler till the cheese is all melty. We used to make these when were kids, and it was always a fun one to help out with.
Hamburger Macaroni2 boxes of shells-n-cheese1lb lean hamburger 1 can diced tomatosCook the macaroni and meat separate, then when both are fully cooked add them together in the same pan, add the cheese and tomatos, stir and you're done.
