Fried Catfish

Serves: 2

Ingredients

• 1 pound catfish fillets
• For the marinade:
• 1 cup milk + 1 tablespoon lemon juice (or 1 cup buttermilk)
• 1 tablespoon fresh parsley, minced
• 1/4 teaspoon salt
• Tabasco sauce to taste, a few dashes
• For the breading:
• 1 cup cornmeal
• 1/4 teaspoon cayenne pepper
• 1/4 teaspoon black pepper
• 1/4 teaspoon salt
• Oil for frying (about 3 cups)

Instructions

1. Cut fish into pieces about 1″ wide by 4″ long.
2. Combine marinade ingredients and immerse fish in marinade. Allow to sit at room temperature for 10-30 minutes. (Now’s a great time to make your tartar sauce and coleslaw!)
3. Combine the breading ingredients in a shallow bowl. Coat each piece of fish and set aside to rest while your oil gets up to temperature.
4. Heat 1/2″ of oil in a large skillet to 360-365 degrees F.
5. Fry a few pieces at a time (don’t over crowd the skillet) for about 2 minutes on each side, or until they float away from the bottom of the skillet.
6. Drain on a rack over paper for at least 3 minutes to avoid burning your mouth. Them fishes is HOT!

I used to live in PA,we could get fresh catfish for $4.99/lb...

I now live in NC,you would think being farther south we could get it bout the same price,maybe even $1 less...

Catfish down here cost $8.99/lb or more...I don't get it (price hike) especially cuz I like it (cajun seasoned,favorite side dish is some flavored rice and a side salad) but since we moved-I think we've purchased it twice.

LOL-yeah-we're not a fishing family-lol-I only eat some fish-it's gotta be pre cleaned/fileted for me ;)

We dont eat catfish. My husband fishes but its for grouper, snapper, redfish, that kind of stuff.

 i mississippi were i am from they have ponds and ponds full of catfish.. thats just about the only kinda of fish we ate.. Catfish is a popular fish where i am from.
