lol I didn't even answer the question about freezing, I think it would freeze pretty well, the ingredients freeze pretty well separately.
It should be fine. My MIL freezes her fresh vegetable spaghetti sauce and it comes out like it was freshly cooked.
I freeze pre-baked so I dont know how it will do already cooked because then you are going to thaw and reheat.
Not sure...I have not done many freezer meals....hope it works out......sounds good.
Chunks of potato often get mushy when frozen. It will freeze ok, but use it sooner rather than later.

Potatoes would be my concern also. And the canned beans-beans can get tough,the sugars inside will change the bean's texture.
