1 mom liked this

I got this off pinterest and its really good and very simple.

1 2lb bag of frozen chicken (breasts, tenderloins, or cutlets)

1 block cream cheese (anything but fat free)

1 can rotel

1 can black beans, rinsed and drained

1 can corn, drained

In crockpot, put chicken in first, cream cheese next and dump everything else on top. Turn on low 6-8 hours. Shred chicken once done. Last half hour before serving turn off the crockpot so the sauce thickens a bit (if you want thicker sauce). Serve over rice.

I use mine quite a bit. I got my last crockpot for like $5 at Walmarts Black Friday sale.

I'm sure you could just leave them out.

Or use a different bean, like pinto or kidney...
