 i have noticed lately there are alot of posts from busy moms wanting Quick and Easy Recipes.. not only that include crockpot recipes but other simple recipes as well.. so if you have some you want to share feel free to comment. :)

Pulled Pork in crock pot. Season pork and put in crock, pour 3/4 cup of Dr Pepper. Crock on high 4 hrs or low 6-8. Pork will be moist, shred it and then pour your favorite BBQ sauce and serve

I make this all the time.  I shop at Aldi's and use about 2-3 (28 oz.) cans of crushed tomatoes instead of canned sauce though and just season the crushed tomatoes and I have used puree also.  I use elbow mac sometimes.

Noodles and Sauce

Pasta of choice
Spaghetti Sauce
Parmesan Cheese

Boil pasta. Drain and add spaghetti sauce.  Heat through.  Serve and sprinkle with Parmesan cheese.

Chicken Enchilada Casserole

4 whole chicken breasts
1 onion, chopped
1 large can mild red enchilada sauce
1 large can green chili sauce
1 lb grated cheese (Jack, Cheddar, sharp)
24-30 small corn tortillas
Poach chicken breasts with chopped onion until cooked, about 15 minutes. When cool, shred into small pieces and chop the cooked onion and place both into a bowl with the can of red enchilada sauce AND some of the poaching liquid. (You can do this the night before or have it ready to thaw from the freezer.)
Spread a ladle full of the green chili sauce on the bottom of a 3 quart tin foil casserole pan or a 6 quart Crock-pot. Cover with a layer of tortillas and a layer of chicken, followed by a layer of shredded cheese. Repeat until you have used all the ingredients and you end up with a final layer of cheese on the top.

Bake in a 325°F oven until bubbly... or in the Crock-pot on high for 1 hour and keep warm for the entire event.

2 pkg kielbasa (I use turkey but you can use whatever)

1 cup brown sugar

3 tbs spicy brown mustard (or dijon)

1 small sweet onion, finely chopped

4 tbs butter

Melt butter in skillet.  Add onions and cook until translucent.  Add mustard and brown sugar and stir until combined.  Add kielbasa and cook until heated through.

I serve this over jasmine rice.

If you are in the mood for lasagna but don't want to take the time to make it this recipe is great.  It makes a lot too so good for a big crowd.


Pasta Lasagna

A quicker and easier lasagna made with penne instead of lasagna noodles.

1 lb penne pasta
1 lb ground beef
1 clove garlic, chopped
2 tbs italian seasoning
1 small onion, chopped
2 26z jars pasta sauce
1 15z container ricotta cheese
1 lb shredded mozzarella cheese (divided)
1/2 cup parmesan cheese
2 eggs, beaten
1. Preheat oven to 350. Grease a 13x9 baking dish.
2. Prepare pasta as directed until al dente.
3. In large skillet, add beef, garlic, onion and italian seasoning. Cook until brown. Drain well. Stir in pasta sauce.
4. In bowl combine ricotta cheese, half of the mozzarella cheese, parmesan cheese and eggs. Stir until well combined.
5. In the prepared baking dish layer 1/3 pasta, 1/3 cheese mixture and 1/3 of the sauce. Repeat twice. Top with remaining mozzarella cheese.
6. Cover and bake 35-40 minutes until hot and bubbly.

 This is a great way to use up leftover ham.

Ham & Pasta Skillet
2 cups dry pasta (shells, wagon wheels, etc)
1 can broccoli cheese soup
1 cup milk
1 tbs spicy brown mustard
2 cups broccoli
1 cup ham, cubed or cut into strips
1. Cook pasta according to directions. Drain.
2. In large skillet, combine soup, milk and mustard. Stir and heat to boiling. Stir in broccoli and return to a boil. Reduce heat to low. Cover and simmer 5 minutes or until broccoli is tender.
3. Stir in pasta and ham. Heat through stirring occasionally.

Pizza Burgers - they are quick and delicious!

English Muffins
Ground Beef
Spaghetti/Tomato Sauce
Cheese (can be slices/shredded, doesn't matter really)

Brown the beef in a skillet (can be 1lb or more depending on how many people you plan on serving).  Once cooked, pour in spaghetti/tomato sauce.  Mix well.

Place individual english muffins onto baking sheet.  Scoop meat sauce mixture onto each muffin.  Place cheese on top and bake at 350 degrees until cheese is melted.
