eggplant parm help!!

What are some good sides to make with eggplant parmeson?

Also do you peel your eggplant some recipies say yes and some say no?

I'm going to try to make it for the first time tonite and would appreciate any advice...thanks ladies!

I make garlic bread and a salad. I also make pasta for my kids since their not big fans of it.

Yes, I peel mine. I serve mine with spaghetti noodles and a salad.

I make pasta, just like I do with chicken parm.  I tend to peel the eggplant partially (in strips) it makes it easier to bite it when you eat it (I read about that once in a magazine).

 I've never made eggplant parm.  But I do chicken parm all the time.  I normally serve it with pasta.

 Salad and garlic bread is what I usually serve with it. I don't peel it, but it depends on your preference.

If the eggplant is young, I leave the peel on, if it is older, I peel it.  Any kind of pasta, such as penne or linguine is good, just dress it with a little olive oil, garlic and parmesan .
