2 cups sugar
2/3 cup butter
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon ground nutmeg
1/2 cup flaked coconut (optional)
1. Grease a 13x9x2-inch baking pan; set aside.
2. In a medium saucepan combine sugar and butter. Cook and stir over medium heat until butter melts; cook and stir for 2 minutes more. Cool for 10 minutes. Using a wooden spoon, stir in eggs, one at a time; stir in vanilla. Stir in flour, baking powder, and nutmeg until combined. Stir in coconut. Spread mixture evenly into the prepared pan.
3. Bake in a 350°F oven for 25 to 30 minutes or until edges just begin to pull away from pan. Cool in pan on a wire rack.
