Hello all, I have my work carry in coming up and am looking for vegetarian ideas. There is one person I work with who is a vegetarian and almost every year she ends up with a plate of veggies from the veggie tray. She never complains but I just always feel bad that she is kind of left out. Last year I did a veggie/ranch pizza on crescent rolls which I might make again, but I'm looking for new ideas that go beyond a veggie tray. Thanks!

Macaroni and cheese! Dh's best friend is married to a vegetarian. He is a meat eater, and their children are also offered meats. So obviously she's not opposed to fixing it, she just doesn't eat it. We do Thanksgiving dinner with them frequently, and she fixes home made mac and cheese as her main dish instead of turkey. I also like the idea of meatless lasagna, or perhaps stufed shells?

Something like this...

Cresent rolls stuffed with spinach, feta and mozzeralla.
Ingredients
- 2 tubes Pillsbury (or whatever brand) crescent rolls, 8 ct
- 4 oz crumbled feta cheese
- 4 oz shredded mozzarella cheese
- 3 oz fresh baby spinach (about half of a pre-washed bag), chopped
- 2 oz black olives, finely diced (*this ingredient is optional)
- 1 egg white, beaten
- 1/4 teaspoon red pepper flakes
- dash salt and pepper
Preheat oven to 350. Begin by chopping the spinach and olives and putting them in a large mixing bowl. Add the feta, mozzarella, red pepper flakes and salt and pepper. Toss thoroughly and set bowl aside.
Unroll the crescent dough and divide into triangles. Using a spoon, place tiny heaps of spinach mixture on the wide part of the dough triangle.'
Roll them up!
Place on a greased cookie sheet. Before putting them in the oven lightly brush each roll with the egg white. Bake for 15 minutes or until golden brown.
