What are some good, easy recipes for kids to make?

My dd is 8 and has made it her resolution to cook dinner for the family once a week this year.  She got a kids cookbook for Christmas but it doesn't have too many recipes in it that we would all eat.

This week she is making turkey club sandwiches.  :)

 How about this:

 Meatball Subs

1 bag small frozen meatballs
1 28 oz can tomato sauce
hot dog buns
shredded mozzarella cheese

Heat meatballs in sauce over medium-low heat until heated through.  Spoon into hot dog buns, sprinkle cheese on top--pop into microwave for 30 seconds or until cheese is melted.

Can you assist or is she wanting to do it all by herself?

 Kids Casserole: Makes 6 servings

Butter, for pan
5 medium russet potatoes, sliced thinly
4 tablespoons flour
5 hot dogs, sliced
1 head broccoli, chopped
1 cup shredded Cheddar cheese
1/2 cup milk

Preheat oven to 400 degrees F.

Lightly butter a 9-by 13-inch baking dish. Layer half the potatoes and sprinkle with half the flour. Add a layer of half the hotdogs and broccoli. Add half the cheese, and repeat the layered ingredients, ending with cheese. Pour the milk over all, cover with foil, and bake until potatoes are tender and casserole is bubbly, about 40 minutes. The kids will love this one.

2) Stir in tomato paste, onions and seasoning
3) Cook over low heat for 5 minutes, stirring frequently. Mixture will thicken.
4) Meanwhile, place biscuits in greased muffin tins. press them in so they cover the bottom and sides of each cup.
5) Spoon about 1/4 cup meat mixture into each biscuit-lined cup. Sprinkle with cheese.
6)Bake at 400 degrees for 12-15 minuted or until brown.

For an even healthier version, use ground turkey or chicken instead of beef.

Too Easy Chicken Pot Pie:

2 (10oz) cans cream of chicken
1 can cream of potato
1 can cream of celery
1 can sliced potatoes
1 can corn
1 small can of peas/carrots
2 cans of chicken breast, or leftover cooked chicken
1can of Pillsbury biscuits

Combine it all (except biscuits) in a saucepan until it starts to boil. Dump it all into an 8 x 8 pan, put cuncooked biscuits on top of this mixture and place it all in the oven. Cook as directed on the biscuit can.  You might have to check the bottom of the biscuits to see if they are done.  Sometimes to be quicker I cook the biscuits seperatly (while the mixture is cooking)
