Recipe of the Week, January 6: Chicken Paprikash
This is a recipe that I got from a friend. It's her mother-in-law Anna's recipe for Hungarian Chicken Paprikash that she prounced "popperkosh.” It's really delicious.
Hungarian Chicken Paprikash
1 chicken, cut up
1 Tbsp. olive oil
2 large onions, chopped or sliced
1/2 tsp. ground pepper
2 Tbsp. paprika
1 small ripe tomato, peeled and chopped
1/2 small green bell pepper, chopped or sliced
2 Tbsp. all purpose flour
1/2 pint sour cream
Salt & pepper to taste
Sprinkle chicken with salt and let stand 1/2 hr. Meanwhile, sauté onions in large pot and cook until a golden color. Add the chopped peppers, remove from heat, and add paprika. Mix well, add chicken and tomato, and cover tightly and stew until onions dissolve and chicken is tender, turning occasionally. Season with salt and pepper to taste. Remove chicken to a platter. Mix flour with enough cold water to make a thin paste.
Continue cooking sauce while adding the thickening agent until a gravy-like consistency. Add some of this sauce to the sour cream until pourable, and then pour mixture back into sauce. Pour sauce over chicken and serve over noodles or rice.
I made this last night! It was SO good, really easy and everyone liked it! As my DH said "this one is a keeper"!
