Normally when we have pot roast I put potatoes and carrots in the crock pot and cook them with the roast. Sometimes I'll put cabbage in it too.

When I make pot roast I cook it in the Crock pot with red potatoes, carrots and onion so it already has a veggie side and then I normally make biscuits or a salad

We usually roast potatoes, carrots, and parsnips with the roast, very good.

Roasted potatoes/carrots/celery...

If you're making pot roast in a slow cooker just add whole red potatoes, chunks of celery and baby carrots.

But you could do something like stove top or couscous
