Any moms out there that are diabetic? I am and I'm looking for some fast & easy diabetes friendly recipes that I can share with my family. Sometimes I feel left out of a good meal because I know it'll affect my blood readings.

diabetes runs in family. I will see if I can find one my mothers diabetes cookbook later and find you some recipes.

i had gestational diabetes and had to eat protein at every meal. i am no help beyond that.

I'm not but I have used the Betty Crocker site and made a few of the Diabetic recipes. They were very good.

 From the Eating well with Diabetes Cook book

Broth with Vegetables

Co 1/2 cup (125mL) vegetables or combinations of vegetables
in boiling salted water; drain. Add to hot broth just before serving

MICROWAVE: Add 1/2 cup (125mL) vegetables (no water needed). Cook on high for 3 minutes. Add to hot broth just before serving.

Yield: 1/2 cup (125mL)
Exchange: 1/2 vegetables
Calories: 18

From the Eating Well with Diabetes Cookbook

Broth with Noodles

Cook 1/4 cup (60mL) noodles or broken spaghetti in boiling salted water; drain. Add to hot broth just before serving

Microwave: Add 1/4 cup (60mL) noodles or pasta to 2 cups (550mL) boiling salted water. Cook on high for 3mins. Hold 3mins. Drain. Add to hot broth just before serving.

Yield: 1/4 cup (125 mL)

Exchange: 1 bread

Calories: 68

 From The Eating Well with Diabetes Cookbook

Pizza Stew

1 oz  Canadian Bacon  30g

1 1/2 cups Tomato Sauce  375mL

1/4 cup   water 60mL

2 tablespoons  onion (chopped)  30 mL

1 tablespoon  mushroom pieces   15mL

1 tablespoon  Black Olives (pitted and chopped) 15 mL

1 tablespoon  Celery (chopped)  15mL

1 tablespoon   green pepper (chopped)  15mL

dash each     oregano, garlic powder, salt to taste

1/2 cup   elbow macaroni (cooked)   125mL

 

Fry Canadian Bacon; drain and cut away any fat. Heat Tomato soup and water to a boil. Add Bacon, vegetables and seasoning. Cook until vegetable are tender. Add macaroni; reheat.

 

Yield: 2 1/4 cup (560mL)

Exchange: 1 hich-fat meat

             1 bread

             1 vegetable

Calories: 275
