So, I am going to start trying to eat a little healthier. All we eat as sides that aren't starch for dinners are canned veggies with just some salt and pepper in them. The few recipes I've tried are not very healthy at all (i.e., creamed spinach with heavy cream in it, veggies with lots of cheese, etc). I am also conditioned to want to add butter to everything :/ So please, anyone, share some recipes that are flavorful and healthier than what I'm used to cooking! My husband is super picky with veggies, so here is a list of things he will eat:
green beans
mushrooms and onions
broccoli
spinach and possible other leafy greens like kale
avocado
tomato
cucumber
zucchini
eggplant
I know that's not a huge variety, but I'd rather fix something that he will eat, as well. Even if you don't have a certain recipe and can share some spice pairings with certain veggies to add more flavor, I would appreciate it!
sliced cucumbers in 1/2 vinigar and 1/2 water. yummy!! not on your list but dh is very veggie picky and likes bacon wrapped asparagus as well as brown sugar roasted squash.

I have found the best way to get veggies into my family is to leave them raw and serve them with a little ranch.
Chunked eggplant with or without skin, cut up Roma tomatoes, mushrooms, zucchini, onions, squash, potatoes, really whatever you like....brush with a olive oil and season with salt and pepper then roast in the oven at 350 for about 30 minutes or until they look good to you! Roasted veggies like this are really good as a side and with couscous, rice or baked potato! The eggplant-tomato combination roasted is my favorite. You could even sprinke with a little parmesan cheese.
Grilled asparagus is really good, too. I have an indoor grill pan. Grill using EVOO or canola oil, then splash with a little balsamic vinegar.
Also, my favorite way to cook spinach is very simple, I sautée in EVOO with chopped fresh garlic just until it starts to wilt. We eat it just like that, but If you want more flavor, you could add a splash of vinegar or lemon juice.
