Probably chicken breast with mushrooms. I'm thinking I'll pan fry and then let it all simmer in some broth with a splash of sherry or marsala.

I have a coq au vin recipe in the crock pot. Hope it turns out good!

Do you coat with flour and then pan fry? I've done chicken marsala with mushrooms and carrots but didn't pan fry with flour, just cooked in butter first I bet frying in flour would be good!
