I had some leftover pork loin roast from supper the other day, so I shredded it, added some BBQ sauce (as much or little as you like) and spread it on a tortilla. I sprinkled about 1/4 cup shredded sharp cheddar cheese on top of pork, then topped with 2nd tortilla. I grilled on my griddle until it was lightly browned on one side then flipped and browned second side. Let stand off the heat for a couple minutes so all the filling doesn't ooze out when you cut into trinangles.
My DH LOVED it and I thought it was pretty good too! Very quick and easy wsy to use up leftover pork roast. I will definitely make them again.
