Homemade homefries (crispy!)

I'm always finding new recipes online; however with my extremely picky (child-like) taste buds... I mess with them a bit. :] Tonight we had yummy breakfast for dinner. The homefries I made weren't as greasey since I baked them and were crispy reminding me of the ones I used to get back at this little breakfast diner in south carolina!

ENJOY!

Need:

Potatoes (I peel them just because I'm picky, but you don't have to)

Garlic powder & garlic salt & season salt & ground pepper & paprika & oregano & parsley leaves

My family likes chopped up onion and green peppers in it as well

Butter & olive oil

Preheat the oven to 350 degrees.

Chop up the potatoes (about one inch size cubes are best)

Put them in cold water in the fridge for an hour or two

sprinkle all the ingredients & drizzle some olive oil

spread into greased pan

Cook for about 45 minutes (flipping and stirring every 10 minutes - 15 minutes)

Then once soft and thoroughly cooked; flip on the broil on the oven and let cook extra 10-15 minutes (KEEP AN EYE ON IT THOUGH... my oven cooks slow!)

hm......do i need to soak the potatoes to get the starch out?? I always have a hard time making hash browns. Maybe this is my problem!

I would have used garlic powder, no season salt, and added my own salt to that. 

That ^ and I cook mine in a skillet with a bit of oil. That's the only difference.
