One of my favorites (I made tonight) is Olive Garden's Zuppa Toscana:

Zuppa Toscana

INGREDIENTS:
1 (16 ounce) package smoked sausage
2 potatoes, cut into 1/4-inch slices
3/4 cup chopped onion
6 slices bacon
1 1/2 teaspoons minced garlic
2 cups kale - washed, dried, and
shredded
2 tablespoons chicken bouillon powder
1 quart water
1/3 cup heavy whipping cream
DIRECTIONS:
1.Preheat oven to 300 degrees F (150 degrees C).
2.Layer the sausage links onto a baking sheet and bake for 25 minutes, or until done. Cut in half length-wise, then cut at an angle into 1/2 inch slices.
3.Place onions and bacon in a large saucepan and cook over medium heat until onions are almost clear.
4.Remove bacon and crumble. Set aside.
5.Add garlic to the onions and cook an additional 1 minute. Add chicken base or bouillon, water, and potatoes, simmer 15 minutes.
6.Add crumbled bacon, sausage, kale, and cream. Simmer 4 minutes and serve.

Olive garden actually has a lot of their recipes on-line, not copy cats the actual recipe they use.

I got the idea to do chicken chunks in the crock pot from Frickers. Frickers kind is breaded but I like my version better.

My Chicken Chunks

Ingredients:

boneless skinless chicken breasts, cut up into bite size chunks

wing sauce of choice (cant mix with butter if wanted)

Directions:

Put chicken and and sauce into crockpot. Cook on low or high for a couple of hours.

I have not tried any restaurant recipes at home yet....but I do love Chili's Chicken Tenders....yum....there's a copycat recipe online for them but I have not tried it.

Chili's Chicken Crispers
http://deep-fried.food.com/recipe/chilis-chicken-crispers-281782

1 eggs, beaten
1/4 cup whole milk
3/4 cup chicken broth
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1 cup self rising flour
10 chicken tenderloins
1/2 cup flour
oil (6 to 10 cups) or shortening ( for frying, 6 to 10 cups)

  1. Heat shortening or oil in fryer to 350 degrees F.
  2. Combine beaten egg, milk, chicken broth, salt and pepper in a medium bowl. Whisk for about 30 seconds to dissolve salt. Whisk in 1 cup self rising flour. Let the batter sit for 5 minutes.
  3. Coat each piece of chicken with dry flour, and then dunk the chicken into the batter. Let a little batter drip off the chicken and lower it into the hot oil. Fry for 7 to 9 minutes.
  4. Repeat with the remaining chicken, frying 3 to 4 tenderloins at a time. Drain fried chicken strips on paper towels and serve with honey mustard dressing.

I do something like this.

I use tortilla chips, ground beef seasoned for tacos, cheesy salsa, sour cream, refried beans, and sometimes lettuce.

I don't like it with the shredded cheese cause it doesn't melt well enough for my liking.
