Green Velvet Cupcakes

Green Velvet Cupcakes

Cupcakes
  • 1 package (18¼ ounces) German chocolate cake mix with pudding
  • 1 cup sour cream
  • ½ cup water
  • ¼ cup unsweetened cocoa powder
  • ¼ cup vegetable oil
  • 1 bottle (1 ounce)  Green Food Color
  • 3 eggs
  • 2 teaspoons  Pure Vanilla Extract
Fluffy White Frosting
  • 1-1/4 cups sugar
  • 3 egg whites
  • ¼ cup water
  • ½ teaspoon cream of tartar
  • 1 tablespoon  Pure Vanilla Extract

Instructions
  1. Preheat oven to 350°F. Beat cake mix, sour cream, water, cocoa powder, oil, food color, eggs and vanilla in large bowl with electric mixer on low speed just until moistened, scraping sides of bowl frequently. Beat on medium speed 2 minutes.
  2. Pour batter into 24 paper-lined muffin cups, filling each cup ⅔ full.
  3. Bake 20 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pans; cool completely on wire rack.
  4. For the frosting, in an electric mixer with the wire whisk attachment, beat the sugar, egg whites, water and cream of tartar about 3 minutes until foamy.
  5. Add the mixture to a heat safe bowl and place it over a pot of simmering water. Stirring occasionally, heat the mixture until warm to the touch and the sugar is dissolved, about 5 minutes.
  6. Add the mixture back to the electric mixer bowl, add the vanilla and beat at a high speed for 15 minutes until thick with soft peaks.
  7. Frost the cupcakes and serve.

If only they didn't have sour cream. Looks good though.

 Because you use a German Chocolate Cake mix, they are a dark green. I'd had it before made with a white cake mix, and they are bright green.

Those look so good...and yet reminiscent of moldy at the same time. LOL!

I'd like to see the ones with the white cake mix with the lighter green, hehe
