A Potato and ground beef lasagna?

Anybody have a good recipe for it?

I have not tried this dish myself but here is a recipe I googled from hillbillyhousewife.com

Easy Potato Lasagna

This recipe is one we have always used especially in tough times around our farm.

  • 4-6 large potatoes
  • 2 Jars Spaghetti sauce (homemade or store bought)
  • Green & red peppers
  • Onion
  • Mushrooms
  • Vegetables(any you have in the fridge)
  • Italian spices or any spices you like.
  • Grated Cheese(any kind)

Cook Ground meat, veggies, peppers, mushrooms. Assemble the potatoes in place of Lasagna noodles and layer all other ingredients. Potatoes can be par boiled if you wish, If not put a little extra sauce above each potato layer.

Cook in oven at 350 degrees until potatoes are soft.
These freeze well in single serving sizes or larger sizes.

My ex MIL used to make a really good potato and ground beef lasagna, it was soooo good.

That does sound good.  My DH would love this since he loves anything with potatoes!

Yes but its a potato and meatloaf casserole (layered kind of thing).You slice your potatoes thin and layer them on the bottom. A can of corn goes in the middle. Meatloaf mixture on top. And then bake as a casserole.
