Besides potatoes (I ran out and can't get to the store today because of snow), what side dishes do you serve with a beef roast??

You could do cous cous (I usually serve that with roast leg of lamb), or macaroni and cheese.

Sometimes we do roasted carrots and parsnips.

Ooh, corn pudding!  Great idea!  I don't think I have everything I need to make it though.  :(

I ended up serving it with fried rice, cranberry sauce and cucumber slices.  It was good but roasts just aren't the same without potatoes.  :)

brown sugar carrots, corn casserole, rice flavored with beef broth, broccoli, lots of options!
