Recipe of the Week, March 17: Corned Beef Hash

What will you do with the leftover corned beef? Reuben sandwiches are a good idea, or you could make Corned Beef Hash.

Corned beef has no corn.  Corning is a cure.  Curing is an ancient process invented before refrigerators for preserving meat by packing it in salt or soaking it in brine. In recent years, curing is also done by injecting meat with a salt solution.

Canned Corned Beef was a World War II staple among civilians and among the troops in Europe because fresh meats were hard to come by.

Corned Beef Hash

2 to 3 tablespoons butter

2 cups cooked corned beef, finely chopped

3 cups cooked, chopped potatoes

2 tablespoons chopped onion

2 tablespoons chopped parsley, optional

salt, pepper and brown gravy beef broth

Melt butter in a large skillet over medium-low heat. Add corned beef, potatoes, and minced onion; spread evenly in the skillet. Brown on one side; turn with a spatula and brown the other side. Continue turning until most of the meat and potatoes are well-browned. Drain off excess fat and moisten with 3 or 4 tablespoons of brown gravy or beef gravy or beef broth. Sprinkle with chopped parsley and salt and pepper, to taste. Serve with a fried egg on top, if desired.
Its also good to add red  or green peppers when cooking.

I love corned beef and-love-love runny fried eggs on top. I have a bit of left over corned beef and potatoes. What could be more appropriate than using them in a hash

I've never made it but use to like it from a can.

I will have to try this, sounds great.

Yes, I do love it and will make it if I have enough corned beef leftover.

I dont care for it. DH loves it. I have a feeling i might like it this way but he likes the stuff from a can and to me it smells like pet food and tastes really salty.

 I love it! Never from a can though, I usually just make mine with potatoes, a few seasonings and the corned beef. That is the most exciting part of corned beef to me, using the leftovers the next day!

I was going to try this with our leftover corned beef but my husband made sure that there wasn't any!!!!
